At Thanksgiving I handed my boyfriend the Cumin instead of the Cinnamon for the Apple pie...! Luckily it was on top of the sugar so I got just about all of it out and it was the best apple pie ever.

Eggplant Rollatini
OMG - so very good. I'm sure it is excellent made the way the recipe calls but I changed to accomodate my veggie husband. Instead of frying I baked and sprinkled with EVOO. Instead of pancetta I rolled two veggie meatballs in the middle. They stayed together perfectly and the texture was perfect. I also used 2% ricotta. We bothed loved it. HOMERUN RECIPE and better than Eggplant Parm! Thank you!

Quick Quiche
Used the basic recipe minus the butter for items I had on had which included turkey sausage, onion, pepper jack cheese, chopped chiles and green chile salsa. I only seasoned with black pepper and did not need any salt. I also topped with sliced fresh tomatoes and it looks oh so pretty. Great recipe. One more thing. I like the plain flour MUCH BETTER than Biscuit!

Grammy Burnham's Molasses Cookies
Oh so good. I changed it up slightly: 1 cup brown sugar, 1/2 cup white butter instead of shortening (melted then room temp) 1 cup rasins, 1/2 cup chopped dates cooked 10 minutes exactly PERFECTION! And like another said, seal in air tight bag and they are even better the next day.
