Quinoa with Mushrooms

I made this last night, my hubby loved it. I added a handful of cherry tomatoes, sliced in half and about two cups of spinach that I needed to use up to the mushroom mixture. Definitely will make again.

Fresh Cherry Crisp

I was given a bag of fresh sour cherries and found this recipe. I just pulled this out of the oven, and it is delicious. Very easy to put together. I did not use the half cup of shortening that the recipe calls for and next time I will cut down on the topping probably by half.

The Best Steak Marinade

Grilled Halibut with Cilantro Garlic Butter

I made this last night and it was really easy and had fantastic flavour, it's a keeper. I elected to bake the halibut at 400 for 15 minutes vice grilling.

Fresh Guacamole

I made this last evening and it was easy and fantastic. I didn't have any red onion or hot sauce so I substituted one small cooking onion and some ground chili pepper. My husband loved it and he is not usually a fan of guacamole.

Spicy Sausage and Rice Casserole

I took the recommendations of others and just cooked this on the stove top. Quick and easy, and I tossed in what I had on hand, red peppers, corn, etc... I did leave out the salt and glad that I did.

Shrimp and Feta Cheese Pasta

This was really quick and easy with good flavour. I used another reviewers suggestion and used 1/2 cup white wine. I didn't have two tomatoes so I used some yellow peppers that I had in the fridge. Next time I will use more feta, that is just a personal preference.

Chicken Broccoli Supper

This was great, fast and easy. The chicken was very moist. I used white wine (1/2 cup) instead of the chicken broth and fresh broccoli as that's what I had on hand. I also added a healthy sprinkle of crushed red pepper. I will definitely make this again. Thanks.

Curried Cauliflower

I have made a similar version of this for years but, no longer, this has replaced my old recipe. Very quick and easy. I didn't have any crackers so I substituted fine bread crumbs and used low fat soup, it was delicious.

Oven Pot Roast

This turned out so well, save for the fact that I did not watch it closely enough and it was slightly over done for our taste. Regardless, it was tender. I used one cup white vermouth and the full package of onion soup. This is a keeper. Thanks.

Mushroom Rice

I live in a hotel during the week for work so my kitchenette is not always well stocked, needless to say I used a small onion and crushed red peppers instead of green onions and parsley, and this was great. I will definitely make this again. Thanks.

Baked Shrimp with Feta and Tomato

I actually made this with chicken and it was excellent. I followed the recipe and just browned the chicken before I put it in the oven. I used more garlic and added Italian spiced tomatoes. Can't wait to try this with shrimp! Thanks.
