Roast Sticky Chicken-Rotisserie Style

This is an awesome recipe! I never refrigerate before-hand and still turns out amazing. If I don't have 5 hours, I usually up the temperature to 300-325 and cook for 3 or so hours. Delicious!

Pumpkin Pie Pudding

This was incredible! Better than pumpkin pie in my opinion! Subbed half & half for the evaporated milk because I didn't have on hand. Took about 3 hours in my large crock pot. Will definitely make this again!

Italian Sausage, Peppers, and Onions

I absolutely love this recipe! I did modify it a bit to my taste, but generally the same. Serve with a side of spaghetti topped with Italian seasoned tomatoes. Delicious! Definitely a favorite recipe!

Eggplant Parmesan I

I followed the general concept of this recipe, but breaded the eggplant before frying it. Turned out amazing. My daughter couldn't get enough and I felt it was better than my regular lasagna I make with pasta.

Zesty Slow Cooker Chicken Barbecue

This was really good. I used a whole chicken that I had cooked earlier in the week, shredded and put in the crock-pot with the sauce mixture on high for a couple hours (until heated through). Will definitely make again!

Spinach Enchiladas

These were amazing! I pretty much kept the recipe as is, other than added a little seasoning salt to the spinach mixture, subbed cottage cheese for the ricotta, and used the 10 minute enchilada sauce recipe. So amazing. Oh, and I also used fresh spinach instead of the frozen, and sweet onion rather than green. Just minor changes.

Chinese Chicken Fried Rice II

This was really good! I didn't have oyster sauce, so I subbed with soy sauce and used white wine instead of the sherry. I also added a tsp. of worchestershire sauce. I added ginger in with the marinade and red and yellow peppers as well as mushrooms in with the broccoli. It turned out great!

Caldo de Res (Mexican Beef Soup)

All I can say is ABSOLUTELY UNBELIEVABLE!!! This was not only the most beautiful soup I've ever made, but by far the most tasty! The lime and cilantro really make this soup, otherwise it just tastes like vegetable beef soup. Cumin as well is a necessity. Makes a lot, but so good. Looking forward to leftovers, as I'm sure when the flavors sit overnight, will be even more delicious!

Cherry Berries on a Cloud

This was a huge hit with my family! I usually come home with a half eaten desserrt, but not this time! It was completely gone and people were begging me to make more! It was a little too sweet for my taste (and that was after cutting a half cup from the meringue and a half cup from the cream cheese mixture). If I make again, I'll leave the marshmallows out. Definitely not needed. I made a strawberry glaze with sliced fresh strawberries and frozen blueberries to top it. Wonderful!

Cream Cheese Fruit Dip

This is good, but not anything to rave about. I tried it because I had all the ingredients on hand. It's good with apples, but honestly tastes more like frosting than a fruit dip.

Zucchini Herb Casserole

I thought this was really good. I'm trying to incorporate more veggies and less meat in my diet, so I served this as a main dish. I added mushrooms, subbed sweet onion for the green onion, seasoned to taste and then followed the directions as written after that. It was yummy! Won't hesitate to make this again.

Turkey Tetrazzini II

This was very delicious! Classic tetrazini! I added a few seasonings like garlic salt, onion powder and black pepper. Very yummy, comfort food! Great way to use up leftover turkey.

Anniversary Chicken I

This is seriously delicious! You wouldn't think all the flavors would go together, but they do! I marinated the chicken in the teriyaki sauce for several hours, then browned the chicken with the marinade. Placed in a dish, covered in ranch and baked until almost done. Then I covered each piece of chicken with cheese, bacon bits and green onions. I cooked until the cheese was melted and chicken was cooked all the way through. Delicious!

Ten Minute Enchilada Sauce

I thought this was a really good recipe! I used The New Mexico Chili Powder as recommended, 1 cup of water, doubled the spices, halved the chili powder, and used 2 T of my gluten free flour blend. This was perfect since I have a really hard time finding a gluten free enchilada sauce, and was so fast and easy!

Old Fashioned Prune Cake

This cake is really amazing! So moist and flavorful! I converted to gluten free using my flour blend, and you'd never know it! I halved the recipe and baked in a 9 in. square for about 30 min. I cut back on sugar in cake and in sauce, and was still plenty sweet. I boiled prunes and then chopped in my food processor. I also added 3 oz. baby food prunes. Everything else I pretty much kept the same! Delicious! I had kids and adults asking for seconds! I did let them taste it first before telling them it had prunes in it. Once they knew how good it tasted, they didn't care what was in it! Delicious!
