Slow-Roasted Tomatoes

Reviewed: Oct. 6, 2011
These turned out wonderful. Made them as the recipe stated, except I used tomatoes out of the garden, and I used foil on the pan to cut down on the mess. I chopped them up to use in risotto (what I had left after munching on them like candy!) I can think of so much to do with these tomatoes. I saw someone say to not use the sugar, but I would certainly not leave it out.

Chicken Cilantro

Reviewed: Sep. 15, 2011
This was a great base recipe! I did follow other reviews and added cumin and lime. I also used corn instead of hominy and I added black beans to make it more of a Mexican soup. I love cilantro, but I was still a little concerned about the amount used, but it was wonderful!

Home Made Farmer's Cheese

Reviewed: Jan. 28, 2011
What a great recipe! I can't believe how easy it was to make farmers cheese! I wanted to make perogies for my husband, but the closest place I know of to get farmers cheese is almost an hour away, so I thought I would give it a try. I halved the recipe (only because I didn't want to waste a whole gallon of milk if it didn't work). I did have 2 cups of heavy cream in the frige that had just expired, so I threw that in there too. I didn't have any luck with the leftover whey, but I didn't expect to because it was pretty clear. The cheese turned out sweet and velvety, I am really hoping that I have enough for the perogies after I've been taste testing it! I will be making this all the time. AMAZING!!!!

Cheese Straws

I was not very happy with this recipe, I was expecting more flavor. I made them as written, the texture was great, but they were very bland and nobody ate them.

Cranberry Squares

Reviewed: Jan. 20, 2011
I was looking for something to do with leftover homemade cranberry sauce, came across this recipe and was impresses with the outcome. The only change I made was to add some quick cook oats to the top layer to make it more like a cereal bar. That worked out very well, but I am sure that the recipe would be great untouched. I took them to work and they were gone within minutes!

The Best Rolled Sugar Cookies

Reviewed: Jan. 20, 2011
These cookies were just what I was looking for. Unlike many rolled sugar cookies, they didn't turn out rock hard. They puffed up just enough to be soft, but not too much that they lost their shape. The flavor was great too.

Breakfast Pies

Reviewed: Oct. 6, 2010
I made these exactly as written and they turned out perfect. For those who had problems with spillover, make sure you flatten the biscuits enough so the edges come up over the muffin tin just a little, and don't fill them all the way to the top with egg. The egg puffs up, but doesn't spill over. My only mistake was I should have made two batches! The kids and my husband loved them. I will be making more this weekend to take to work through the week for my mid morning break, they are even great heated up. I also think they would be great with a variety of ingredients. What a wonderful idea!

Creamy Horseradish Garlic Spread

Reviewed: Jun. 12, 2010
This recipe is very good. I like the fact there isn't too much dill, just enough to mingle with the other flavors. I did have to double the horseradish for our tastes, but we like a lot of horseradish so I wouldn't recommend that for everyone. My husband says it tastes just like the sauce at a restaurant he likes in Granger,In. We are serving it up with a grilled rib roast tonight if there is any left by that time!

Rick's Special Buttercream Frosting

Reviewed: May 22, 2010
This frosting is wonderful! I made it for a cake on my stepsons birthday and sent a large chunk of cake home with him to his Mom's. Now I'm making a cake for his stepdad, because he loved the frosting so much! Thanks Rick!

High Temperature Eye-of-Round Roast

Reviewed: Mar. 11, 2010
I have to admit, I was worried when I finally opened the oven and it was not really warm, but I got out the meat thermometer and the roast was perfect!!! I took leftovers to work for lunch and my co workers asked how I made such a beautiful dinner, when I told them they were amazed! I have avoided eye of round for a long time because I didn't know how to cook it so that it would be tender. The only other time I cooked it was years ago. I braised it and ruined dinner. This recipe will save me a ton of money! I can buy eye of round for at least a dollar cheaper than other cuts and much less than ground beef. I bought 3- 3lb roasts on sale this week, now I will be buying more and playing with seasonings depending on what side dishes I make.

Beer-Batter Onion Rings

Reviewed: Feb. 8, 2010
I loved the lightness and crispiness of this batter. It was exactly what I was looking for. I just used the batter recipe to fry something else, not onion rings, but I followed the recipe for the batter. I would have given it 5 stars, but reading the recipe I saw there was little seasoning, so I used the seasoning ratios from another batter from this site.

Sweet and Spicy Pumpkin Seeds

Reviewed: Oct. 25, 2009
I wish there were more stars that I could give these seeds! I have been eating pumpkin seeds every year all my life. I decided to see if there was something different I could do for a special treat for the boys and decided on this one. Am I glad I did. I went by the recipe exactly. They reminded me somewhat of kettle corn, with a little spice (but not too much for the kids). All the kids and hubby really loved them. Next year we'll have to save more seeds. Thank you Lotus!

Butter Cream Frosting I

still not what i was looking for. it was a little sweet, and turned out heavy, even after adding additional milk. I beat it in the KA for a good 10 min and still didn't fluff up.

Best Ever Butter Cream Frosting

Reviewed: Oct. 3, 2009
I followed the recipe to a "T" and it turned out pretty good. It was a little greasy though. I saw other reviewers who said it seemed curdled, mine did too until about 10 minutes into beating it with the kitchen aid. I beat it for the whole 20 min and it came out pretty fluffy, still greasy though. EDIT: Okay, i wrote the review for this recipe after i just tasted the frosting in the bowl. I went ahead and used it (thank goodness) and filled my cake, then it sat in the fridge overnight before I put the fondant on. This frosting came out so perfect for filling cakes! Once in the cake, it completely lost any greasiness it had in the bowl. I can see myself using this frosting for most of my future cakes. I also think this will be a good base recipe that will lend itself well to other flavorings, besides just vanilla.

Chewy Chocolate Cookies I

Reviewed: Sep. 29, 2009
These cookies had the flavor I was looking for, but despite following the recipe exactly, they did not turn out. I was looking for a flat, chewy cookie, but not that flat. They turned into one big cookie in the oven. I did put the rest of the batch in a small cake pan and baked for about 40 min and it turned into a great brownie type treat! I am giving this recipe 3 stars just because they had a good flavor.

Best Ever Chocolate Chip Cookies III

Reviewed: Feb. 21, 2009
I wish I had found this recipe years ago. I have been trying to tweak the tollhouse recipe to get a puffier cookie with no results. This is what I was trying to do. What I love about it is that this recipe has half the sugar of the classic tollhouse recipe, so I don't feel quite as bad giving them to the boys.

South African Yellow Rice

This would be better if you cut down on the sugar, it was much sweeter than I thought it would be. It has a good flavor though and is a good base for grilled chicken.

Grocery Store Frosting

Reviewed: Feb. 5, 2009
I wish I could give this recipe more than only 5 stars! This is exactly the recipe I have been looking for. My husband likes heavy super sweet frosting, but I like a fluffy, not so sweet frosting. This frosting fits sooo perfectly in the middle, we all loved it. It's also great that there is no perishables in it, so it doesn't have to be refrigerated. This recipe also reduces by half very nicely.Thank you so much for a perfect recipe.

Mayonnaise Cake I

Reviewed: Feb. 4, 2009
I followed this recipe exactly. I usually don't have any problems with baking, but this turned out heavy and left a greasy aftertaste. I just dusted it with powdered sugar like I usually do with chocolate cake when I am in a hurry and the kids want some, but I really don't think any kind of frosting would have saved the taste. It did however, turn out moist. I won't be making this again.
