Double Layer Pumpkin Pie

Not a bad recipe to try as a change up from the traditional baked pumpkin pie I usually eat during the holidays. Since I usually drown my traditional pumpkin pie with whipped cream, this recipe hits the mark for me. I like the fact that it is not baked. Easy to make too.

Chile Rice Casserole

This is a good basic recipe that I like to tweak a little. I never use instant rice, because it lacks flavor and firm texture. I like to use a parboiled or converted type of rice. Jasmine would work too. I cook it first, and then add all of the other ingredients. A can of cheddar cheese soup works well in this recipe too along with the extra cheese. I use a larger sized can of green chilies as well. I used a bunch of minced up poblano peppers I grew in my garden this past summer as well. I had to add some sautéed onion and garlic in butter as well. Adding half the amount of sour cream will work too. Add some water to the recipe so it has a creamer consistency instead of it getting too congealed or sticky.

Best Egg Rolls

Good basic go to recipe. I tweaked it a bit, but I do that with many recipes. I like green onion and do increase the garlic and ginger. I also add just a splash of aromatic sesame oil in the filling just before adding/rolling it in the egg roll wraps and frying. I serve it with a trifecta of three sauces : A decent sweet and sour sauce as well as a wasabi based - mustard sauce. I also serve it with a jazzed up version of soy sauce too. Perfection.

Uli's Apple Red Cabbage

Viel Dank for posting !!!!! It's nice to have the proper ingredients / ratio for this awesome dish. This recipe is as authentic as it gets. The only thing that I would omit is the bacon. My German mom never cooked it with bacon. It tastes great without it. If apples are not available, sugar can be an acceptable substitute. Add it to your taste. This dish is a wonderful balance of slight sweet and subtle sour. Mom never used wine as well, but it does sound like an interesting and additional ingredient for a potential savory flavor. My biggest suggestion is to make this with some spaetzle and rouladen, and you will absolutely have heaven on a plate. It is by far one of my all time favorite meals! It's the definition of comfort food in a major way. :o) !!!! ausgezeichnet !!!!

Thousand Island Dressing Mastered

Great zesty and tasty recipe. I used it for my Reuben sandwiches. I just omitted the egg. Add the egg if used as a salad dressing. If you don't have chili sauce, substitute ketchup instead. And use dill pickle relish, so it won't be too sweet.

Shrimp Linguine

I like to dredge the shrimp in a mix of flour, a little salt /pepper and oregano and then fry them in some olive oil and butter. Remove them from the pan, and then make the sauce. Add the shrimp back to the sauce before serving. Using white wine and fresh mushrooms is always a plus too!

Tantalizing Turkey and Blue Cheese Meatballs

This is a very good recipe for meatballs, and even more so for turkey meatballs. I didn't have blue cheese on hand, so I used Parmesan cheese instead. (Although, I would like to use blue cheese in the future.) I used 1 whole egg instead of the egg whites. I did use the jalapeno pepper(fresh not pickled/canned), and it gave it an interesting and wonderful zip. I am thinking if they are too spicy for some, one can use mild green chilies as a few people have already substituted, or even possibly one can use mild bell pepper too. Thanks for a tasty alternative to the run of the mill & sometimes bland recipes I often see for meatballs. I am pondering using ground beef the next time instead of turkey,..... ;o)

German Beef Rouladen

Pilar - I didn't add pickle because I don't care for it, but will eat it if this recipe is made that way. It doesn't matter what kind of freakin' onion you use in the recipe either. And,... finally,... a little sour cream in the gravy never hurt anyone. I am German too, and I take offense to your critique. My mother is German, and this is basically how she makes it.
