Chicken and Dumplings III

These are delicious! I am not a fan of canned soups but this tastes like it was made from scratch. It is quick and easy to keep the ingredients on hand to throw together for a new neighbor, sick friend, new mom, etc. Each time I am asked for this recipe and jaws drop when I give it to them. Thank you, Melissa, for sharing this recipe and making it so easy for me to provide comfort food to friends on a whim.

Zesty Slow Cooker Chicken Barbecue

I made exactly as written and had no trouble with the chicken being frozen or the sauce being watery. Once I shredded the chicken, the sauce was fine and it was cooked perfectly, the most tender chicken I've ever made in a crockpot (8 hrs on low). The flavor though was lacking and while my family cleaned their plates, no one wanted seconds or leftovers. If I make this again I will modify for a little more zip.

Original Homemade Italian Beef

This is delicious! I used 3 packets of dressing but only 1/2 a jar of peppers. It still had a kick and was almost too spicy for the little ones but everyone ate every bite.

Spinach Enchiladas Verde

This was tasty but a little dry so I served them with extra sour cream and guacamole on the side. I made ahead and baked them the following day so next time I will prepare and bake the same day. I will also add sauteed mushrooms, onions and garlic for a little more flavor. Such a great way to use up an abundance of spinach!

Zucchini-Chocolate Chip Muffins

These were delicious, my entire family loved them and it is not often that all 4 agree! Even our babysitter, who eats like a bird, ate 4. Adding zucchini was a great way to use up a surplus I had while moistening the muffins. The only change I made was subbing 1/2 the oil with applesauce. Thanks for the great recipe!

Easy Meatloaf

Love this easy, tasty recipe. It has so much flavor and I love that it is made with staple ingredients - no special trips to the store. We have this often and I use saltine cracker crumbs since that is usually what I have on hand. Thank you for sharing!

Chicken Noodle Casserole I

I made this for a co-worker who was in between chemo treatments and she LOVED this recipe. Her appetite decreased but she said she would stuff herself with this casserole then sleep like a baby. She recently passed away but I'm glad I was able to cook something for her that brought her such pleasure. Many thanks for sharing this comforting recipe.

Oven-Roasted Potatoes

My husband and daughter loved these so I'm giving this a 4 for them. I thought they were too soggy and a could have used garlic or seasoning salt, which I will try next time.

Chewy Chocolate Chip Oatmeal Cookies

These cookies are the perfect consistency and have the right amount of oatmeal and choc chips. In between batches, I put the dough in the freezer to firm up and had no issues with flattening. I used unsalted butter and they were still a tad too salty. Next time I will reduce the salt and add cinnamon. There was a little something missing and I think some spice would make these exceptional. Thanks for sharing the recipe!

Delicious Ham and Potato Soup

Just made this for the hundredth time and it is still a family favorite! Perfectly delicious and doesn't need a thing. One thing I do a little differently is mash the pototes with a masher a few times - makes the soup thicker.

Chocolate Chip Cheese Ball

I made exactly as instructed and it wasn't a good experience for me! It was runny and never formed into a ball. I had to put it in a bowl and serve as a dip with graham cracker sticks. Just so-so as a dip and had most of it leftover.

Home-Style Scalloped Potatoes

I made this recipe exactly as is and it was very good. My husband, kids, and mother-in-law cleaned their plates. The texture and consistency was as it should be for scalloped potatoes. I didn't give it a 5 because it wasn't quite as flavorful as I expected but my family disagreed with me completely and thought these were the best potatoes I'd ever made.

French Toast Casserole

Fabulous recipe! It only makes an 8x8 pan so make 2 - it goes quickly. I prepared it the night before exactly as instructed and stored in the fridge. The next morning, I threw in some blueberries, stirred, and baked for an hour. I drizzled warm syrup over the entire pan before serving. Perfect!

Banana Cake VI

I have made this cake again and again and it comes out perfect everytime! If I make it as a 2-layer cake, I just bake it for a shorter amount of time. Thanks for this family favorite! **Update - I made this cake for a Dessert War benefitting Big Brothers and Sisters and won! There were over 30 desserts and this fantastic cake took first place. LOVE this cake!
