Oregon Salmon Patties

These were great- I don't normally like canned salmon, but with the addition of breadcrumbs and the two eggs, as well as the delicious buttery onions, I loved the taste. I do not like mustard so I added pepper flakes. To avoid trans fats I just used three tablespoons of canola oil and they came out nice golden. My husband wants it added to the regular rotation. :)

Oatmeal Raisin Cookies VII

I made this for my grandfather with the following changes: 1- Used all brown sugar, it has not been bleached and therefore has more nutrients 2- Used whole wheat flour (for fiber and B complex vitamins in the wheat germ) 3- Plumpled up the raisins for a half hour (easier chewing) I mixed both "blond" and regular raisins. Yum. 4- Make sure to use butter and not trans-fat containing "shortenings" (some even say 0% trans fat because legally, if they have .5 g per serving, they can say 0%. So if a serving is a teaspon or two... If is says partially of fully hydrogenated, it's got trans fats. period.) I made them as drop cookies, and they were both delicious and nutritious.

Mexican Whole Wheat Flour Tortillas

Great recipe. I did not have whole wheat bread flour, so I just used all-purpose whole wheat flour and added some gluten (just replace one teaspon of each cup of flour for one teaspoon of gluten). Thanks for sharing!

French Baguettes

Great recipe- I was surprised that there was no source of fat in this recipe. I cannot tell you how well it "keeps" because, well, we ate it all. The crust was not as crunchy-crusty as I would have liked, even though I placed a shallow pan with a bit of water in the bottom of the oven to create some steam.

Best Chocolate Chip Cookies

Fantastic. I made these for my Christmas baskets and they were a big hit. Word of advice, don't try to make these "lighter" by cutting the butter and substituting part of it for something else. That's ok for cakes or sweet breads/etc. - but for decadent choc chips cookies, no. I did cut back the sugar by 1/5. Pleeenty sweet enough. Also omitted the nuts.

Pizza Dough III

Very easy to work with. I used 1/2 tsp salt and it came out perfect. I like my pizza crispy so i pre-baked for 10 mins without topping. My husband loved it... Thanks for the recipe!

Banana Bread V

Fan-TAS-tic recipe!!!. Trust me, i've tried a bunch of banana bread recipes, this one is hands-down the best. I made the following changes, for health reasons, and it was still super moist, very banana-ish and delicious. -Replaced 1 cup of the flour for whole wheat flour - Used 1/2 brown suger (packed) and half white sugar - used only 3/4 stick butter (1/2 cup is one full stick, which is what the recipe calls for) - Added an extra 1/4 cup of mashed banana to replace the butter i took away. - Instead of nuts, I added 3/4 cup plumped raisins (just soak them in warm water for a bit). - added one tsp vanilla and 1/2 teaspoon allspice. Give this a try, you won't be sorry!!!! I might have to make some more today...

Pretty good. I'm not very familiar with cornbread, so it seemed pretty dry, but a friend told me that's how cornbread's supposed to be. Super easy to make though!

Vegetarian Gravy

This was surprisingly good! Even my husband, who cringed when I said "vegetarian gravy", liked it. After you make the roux (that is, adding the flour in and letting it cook a little), grab a whisk and slowly add the broth, whisking away so as not to get a big clump. I actually had to add a bit of water because it was very thick. I did not have sage but I had a "poultry seasoning" that had sage in it so I used that. Defenitely will be using this recipe again. I froze the leftovers, i'm curious to see if it will defrost well.

Mahogany Chicken Wings

Loved it! For those of you interested in doing this on the grill, just make the sauce on the stovetop and add a bit of cornstarch to thicken, lay aside. Cook your wings on the grill, making sure to char the skin nicely, then reduce heat, cover and bake in the grill until done (15/20 mins). Place on a tray and brush on the sauce generously on both sides. YUUmmm! thanks for the recipe!

Chicken Cordon Bleu II

Excellent. I made it as described except for doubling the sauce (it all still disappeared). I also like smaller pieces of chicken so I split the breasts in half lenghtwise before flattening and rolling them up. After browing them, they spent only 20 mins cooking that way.

Chicken Pot Pie IX

Loved it, and love the fact that it has no canned cream of whatever. used potatoes instead of celery and celery salt instead of celery seed + salt. Also added fresh garlic with the onions. Came out great.

Vegetarian Cottage Cheese Patties

OMG, this is excellent!!!. I made it as is, except I used jumbo eggs and it made the mix too runny to really form patties, I just had to spoon it into the oil. GREAT results though, my husband loved it. Next I will try the no-frying technique shared by other reviewers, but I always like to try the recipe as is the first time around. A HIT, thanks for sharing!
