Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

I wanted to put 5 stars but since I made some changes, thought I'd better not. I read the comments & changed the following: used pork loin, added 2 minced garlic cloves, 1 minced jalapeno, 2 chopped chipotles in adobe sauce, spoonful of peanut butter & eyeballed salsa. I omitted the chix broth b/c there was plenty of liquid + we like it thicker; after shredding pork, it was perfect texture. Topped with cheese & sour cream. It was easy, tasted fantastic & nearly the perfect heat as is (we like it hot!). Thanks to Aunt Jerre!

Simple Time Pork Chops

These were pretty good for simple ingredients. I love pork chops but get annoyed at how dry they can get. Somehow these were pretty tender. I did forget the garlic powder & I never have dried parsley. I just sprinkled them with sea salt & fresh ground pepper. I baked for about 30 min (used thin, boneless chops) @ 350degrees. A strange combo but it works!

M's Sloppy Joe Sauce

I really love this recipe & esp. as yet another "oldie but goodie" that can be easily made vs. buying a can. Per another reviewer, I added about 2 Tbsp tomato paste to thicken it before putting on bread. And Sriracha is the perfect addition!

Mac and Cheese II

My first attempt at mac 'n' cheese & success! No more Kraft! I had a lot of cheese in the fridge but it was a random mixture; I used White American cheese slices, 1 garlic/herb cheese wedge & 1 c mixed shredded sharp cheddar & mozzarella. Per review suggestions, I added chopped onions, a splash of worcestershire, Frank's Red Hot sauce, garlic powder & black pepper. Fiance adored it - I liked it well enough but definitely will try it with *good* cheese next time. Oh, and I baked it for almost 20 minutes which dried it out too much for my liking. Pre-oven, it was super creamy but I guess it depends on how you like your mac 'n' cheese. Thanks! Now I know I can! :)

Curried Microwaved Chicken

Easy! and really good. I was home alone tonight & had a rogue thigh left over in the fridge. I followed most of the recipe for 1 serving, except for using 1% milk & fat free sour cream since that's what I had on hand. I will try this next on the stovetop; I think sauteeing the onion & browning the chicken will add even more flavor. Oh & I cut up some green grapes at the end! Added 1/23/10: I made it on the stovetop - delicious! I followed some of the comments: sauteed onion in butter, browned the chicken with curry, S & P, then added the apple, plus celery, a handful of chopped broccoli & peas (both frozen) with soup and a random mixture of half/half, milk, water. Let it simmer to cook the rest of way (~20 more min.) & thicken. Served over couscous. We loved it! Next time I'll add cubed potatoes.

Potato Skillet

Pretty good for an easy throw together. Plus, as mentioned, good to use up veggies left in the fridge. I waited to crumble the bacon near the end to keep it crisp as someone else suggested, used 4 eggs & red onions. I also microwaved the potatoes so they didn't take forever browning. I made it more like a fritatta so we could cut it up. Make sure you season well if you add more egg of course (used just S,fresh cracked P and garlic powder).

Sweet and Sour Pork Chops

Thank you Deborah! I loved this - simple AND tasty. I didn't marinate & could still taste the flavors. Most of the time, I don't plan ahead & am disappointed by never being able to taste the sauce. I also tried it with tuna steaks - great! - and am making chicken wings with it tonight! Love it! I always have these ingredients so double love it. And, yes, use hot chili sauce - I use Sriracha or the rooster sauce as most ppl call it.

Hot and Sour Chinese Eggplant

I started just going & accidentally added the veg. oil into the sauce but it still turned out great. I added in a mixture of rice & red wine vinegars, I think, and a few drops of sesame oil. My shovel-anything-in-his-face fiance even stopped to declare it really good. :) I will up the spiciness for my taste next time. Tasted even better the next day, almost like pickled eggplant.

Sour Cream Coffee Cake II

It was good -not as fluffy as I thought it'd be - tasted better warm. Maybe my ingredients were off. My butter & sour cream were a scant short; I'd add a bit more sour cream next. I shorted the cinnamon ~1/2 tsp after reading one of the reviews which was perfect for me. I dolloped the thick batter and sort of spread it, not too bad. It does spread out when baking a lot. I also will use a streusel topping & not just cinnamon sugar next time. Thanks for a good basic though.

Honeyed Pork Chops

Just made & ate these. Pretty good. Not spectacular but good flavor. Re: other reviews - go easy on the soy sauce & definitely increase the honey. Don't be afraid - it doesn't get too sweet. Added minced garlic to mix. I sauteed sliced green peppers, then added to the chops about 10 min into baking time. Also took suggestion to thinly slice onion & layer under chops - loved this. Finally I did the roux thing, spooned on top of chops & white rice. Ate with sliced fresh tomatoes and a little S&P. Overall, easy & quick (I only made for 2).

Beer Pancakes

Awesome! I normally dislike pancakes because they're too cakey or something but these are delicious! I think it's the sweetness from the beer. I used Pacifico because that's what we had. Just moved & was too lazy to get milk, etc. Can't wait to try sodas as other reviewers suggested! Great idea!

Cheesy Eggplant Bake

I forgot to "drain" the eggplant so that may be the problem. But even in the crispier corners, the eggplant didn't taste good. Topping was fine but eh. Probably won't try again 'cause I'm too lazy to do the first step. On the search for more eggplant recipes ...

Emily's Famous Hash Browns

Just made these! Yum! You definitely do not need that much oil, I just covered the bottom of the pan & some, maybe 1/4 in. Next time, I may try shredding the onion as someone said or putting in a little less. Also add some spices like garlic powder or just more S/P. Thanks Emily!

Mexican Wedding Cakes II

I don't really bake so this was awesome. I forgot about a Mexican fiesta potluck at work & this was the easiest recipe late at night. Easy & Yum! I usually *have* to have chocolate in some way with baked goods. These were perfect. Definitely rolled them twice in sugar. My fiancee was jealous of my work peeps. I had to set aside a batch for us, er, him. :)

Mom's Cheesecake

Yum! My first cheesecake & declared a success! At a work potluck, a coworker with many a cheesecake under her belt loved it. We both thought it light & airy, a nice difference from most dense ones. Great as is but can't wait to try it again with some toppings.

Vini's Pork Roast

I loved this! I rated a 4 due to the salt. Next time, I will cut amount in half. But that just affected the trim of the roast. I almost skipped the gravy because I was so hungry & in a hurry but glad I didn't. (I don't know what browning sauce is so that didn't make it in.) Even though the pork was tender, it added just the right amount of flavorful juiciness to boost the meat. Easy & my fiancee was "wowed!" Paired with easy mashed pots & buttery spinach with mushrooms/tomatoes made a Sunday-best meal. Thanks Vini!
