Caramelized Baked Chicken

It was delicious... however it definately had to cook longer then an hour to make it caramelized... and I did take off the lid for 15 minutes and then when one side had the nice coating I flipped them. I would say it took at least 1 hour and 1/2.

Pasta Primavera with Italian Turkey Sausage

Just be sure you factor in chopping all those vegetables. That took a minute. But all well worth it my guest had 3 plates full, my dad had 2 and I had 2 and there was still left overs for the next day! yay!

Salmon Cakes III

I THOUGHT IT WAS OK... MY DAD THOUGHT IT WAS GOOD... I WANT A LITTLE MORE "LEMONY" FLAVOR GONNA PUT THE LEMON FLAVOR IN THE SAUCE THAT I MADE FOR IT.

Philadelphia New York-Style Sour Cream-Topped Cheesecake

I only used the topping not the actual cheese cake recipe. so it was really good! and I did not put it back in the oven to back it... ohhh and I put cherries on top!!! yum!

Friends and family really liked it!!! and me personally I like no bake cheesecake, but this was good...also I used brown sugars vs. white sugar so it was not as sweet, I topped it w/ cherries and chocolate shavings!!! nice touch for presentation!

French Beef Stew

I loved it! These were my changes 4 cups of water 2 cups of chicken broth. Organic beef cut up to bite size, Worcester sauce, crushed red pepper, minced garlic, and sea salt. Towards the last few hours I added the floor (at the end for thickening, but still was a little watery) but soaked up nicely w/ bread! Cant wait to taste the left overs tomorrow... It should be way better! The only change I will make next time is to saute the onions, and garlic, and cook the meat just a little (just to try and see if it gives it a little more flavor)

Easy Butter Cookies II

This recipe made my cookies taste just like grandmas the only difference was that I used 1/2 vanilla extract and 1/2 almond extract. I also used 1/2 wheat flour and 1/2 white. Just because I try and stay away from the white flour. I made mine quarter moon shape and w/ half the batch i used crush almonds and made them round to differentiate between the ones w/ nuts in them (for those who can't eat nuts)... everyone loved them... My son is very picky but he like these very much. I made them for thanksgiving weekend and I am making them again. If you want real tasking Greek cookies these are definitely it w/ the changes I made. I could not believe how much they tasted like grandmas. Only other difference is that it took way longer to bake then stated on this recipe... 30-40 minutes is more like it. I live in Buffalo, NY so adjust for altitude and I use an electric oven. Bacon and Feta Stuffed Chicken Breast

I made this w/ drumsticks and I just slit the thicker part of the meat and used the toothpicks as suggest. I also boiled the meat just a little bit to decrease cooking time in crock pot. I used fresh tomatoes instead of canned but boiled them a little. (also I put a little of the boiled water in the crock pot). I used Turkey bacon instead of Pork. Sides included a salad, green plantains and yellow (sweet plantains)... The meal was delicious and needed just a little bit of Frank's hot sauce to make it perfect. Very low sodium diet seemed like! Will make it again.

Lemon-Orange Orange Roughy

I really liked it, I did not think it would be so flavorful! I used lime instead of lemons. I also used sea salt, pepper, and Mrs. Dashes to marinate for about 10 minutes. Then I cooked the fish a little and then added the orange/lime blend. Went great with peas/carrots mix (using the marinade from the fish) and some white rice (not my favorite, but I needed something quick). I would like to try it again when I can marinate it a little longer with the juices!
