About this Cook
I cook for a christian school lunch program Monday through Friday. I also cater for church groups and non profit organizations. I have 3 kids and a husband. Their only complaint is when they walk into the kitchen and the #10 cans are out, and they find I'm only cooking dinner for them, after all leftovers can only be used for so long. One thing I do try to do is triple any recipe and freeze 2, so on the busy nights I have dinner already ready.
My favorite things to cook
Anything except seafood.
My cooking triumphs
Doing a MOPS dinner in a church without a kitchen. I made chicken wellington and baked potatoes. They held wonderfully in a cooler (this was before I got my cambro) I've also done Palm Sunday breakfast and Thanksgiving dinner for 400.
My cooking tragedies
My first Christmas as a married woman, I had 30 over for Italian. Menu was homade manicotti and ravioli. I started the 2 burners and oven and blew a breaker. I put the mannicotti in a smaller pan and used the toaster oven, but it sparked and died. I moved it to a 20 year old microwave, and it started sparking. In the end, I cooked in a borrowed microwave and boiled water in my fry daddy. In the middle of this, my husband commented that I needed professional appliences, I told him I just needed appliences that work. BIG MISTAKE, I'v often regreted that, because if I'd agreed with him I might have my dream kitchen. Oh,well, I can wait till heaven for that. It turned out that the stove was miss wired with 2 different gauges of wire.

Eggnog Pancakes
I added more eggnog because they were to thick and they cooked fast on the outside and runny in the middle. I solved that by giving them 30seconds in the microwave. Flavor was good, but I think I'll try using eggnog coffee syrup in my favorite recipe to achieve the eggnog flavor.

Peppermint Snowballs
great cookie, although it was a bit crumbly. I got tired of rolling so I took all the dough left and placed it in a greased and floured baking pan, topped it with crushed candy and baked it at 350 for 15-20 min. As it cooled I scored it with a knife to make cutting easier.

Pumpkin Torte II
I made mini tortes with this. All I did is use mini muffin tins and followed the recipe. It's fun to do a medley of mini desserts like pecan tarts, key lime tarts, and cranberry brownie bites, so people can try all of them. When presented on a tierd display, they look ravishing.
