Oyakodon (Japanese Chicken and Egg Rice Bowl)

Great recipe -- thank you! If you want to be truly authentic, please use Japanese medium or short grain rice, not jasmine rice, and leave the egg slightly runny. The texture really is quite different, both with the runnier egg and with the Japanese rice. Also, dashi is a light, delicious broth made from kombu (kelp) and katsuobushi (flakes of dried bonito). It's very easy to make. You can get the ingredients, or dashi powder, at any Asian market or in the international aisle of high-end grocery stores. Dashi is NOT powdered little dried fish!

Magic Chicken

Good recipe *IF* you follow directions. Use RED WINE, not sherry...use marinated artichoke hearts in a jar, not plain canned artichoke hearts. If you use the marinated kind, and the red wine, it will have seasoning and oil (from the artichoke hearts) and won't be overpoweringly "alcohol-flavored" as it would be if you used sherry instead of the red wine called for. I do suggest using a decent red wine, not "cooking" red wine, which is usually not very good.

Pork Chop and Cabbage Casserole

Although it's very pale on the plate, it tasted great -- very homey and comforting. I sliced the onion and layered it with the potatoes and cabbage, and used garlic powder and seasoned salt. I didn't heat the soup -- I just used a low-fat cream of chicken soup and mixed it with half a can of milk, and poured it over everything, including the pork chops. I covered the whole thing with foil and baked it for 45 minutes, then uncovered it and baked for another 45 minutes. The chops were tender, not dry, the cabbage was tender, but not mushy -- the whole thing was very good!

Baked Rice Pudding

I liked it very much, because I was looking for a BAKED rice pudding that was not very sweet, not a creamy, stove top rice pudding. Thank you for the recipe!
