Hot German Potato Salad III
I had a 5lb bag of red potatoes to use up and based on the other reviews, I decided to double the sauce ( there were about 10 regular sized potatoes, not minis). Well, it was perfect! I doubled the onions too, but not the bacon and it was delicious. I added the sliced potatoes warm (no need to peel reds IMO) and they soaked up all the yummy sauce. This is a keeper for me!

Bacon Pork Tenderloin
I have made this twice now. First time I used pumpkin butter because it was all I had and just now I used apple butter. I must say they both were great, but I liked the pumpkin more. That flavor was more intense. I use precooked bacon straight from the package (Kirkland brand) and it works great. I can get this prepped in 10 min by skipping the step of cooking bacon. I put my 1.5 lb loin in at 375 for 40 min, bc I was low on time. Glaze got a bit dark even on the bottom rack. Next time I will allow an hour or so to cook it on 350. I love how easy this is even on a work night, thank you!

Roasted Garlic Cauliflower
All of the reviews are correct - this was fantastic! I used fresh garlic that I pressed (it was really garlicky bc I used a whole small head, but I love garlic). I did reduced the temperature to 425 degrees and left mine UNCOVERED and it roasted beautifully (my pieces of fresh cauliflower were avg., not too small). I enjoyed this just as much cold the next day. Awesome. Can't wait to make for a family party. We usually bread and fry ours, but this was much easier, healthier (I'll try two tbls of oil next time and see if I can get away with less oil) and way less messy! Thanks for such a great recipe.
