My favorite things to cook
I love to cook...my favorite things to make are healthy, fresh salads, and chocolate desserts. Wow, that sounds really contradictory!!! In the wintertime, I love to make homemade soups and stews...with homemade stock.
My favorite family cooking traditions
My favorite tradition is to go to Findlay Market (Ohio's oldest outdoor food market) with my husband and kids and buy whatever is fresh and locally grown. Then, go back home and find a recipe for whatever we bought and cook it up!
My cooking triumphs
Hosting a 38th birthday party for my husband - Mexican Fiesta theme - for 20 people with a baby and a 2 year old on my hands!!! I made 2 different types of enchiladas, a taco bar, mexican rice, guacamole, and sopapilla cheesecake pie for dessert. I got most of my recipes from allrecipes.com and they were all a hit!
My cooking tragedies
That would be Thanksgiving when my glazed caramelized carrots recipe turned out a little TOO al dente...as in basically raw carrots! I still remember my grandmother trying to take a bite of a carrot, and not being able to because it was so hard! That taught me the lesson to always taste what you serve BEFORE you actually serve it!

Chicken Chili with Black Beans and Corn
This was really good! Healthy & hearty. Changes I made: used rotisserie chicken and pulled it apart to save time, used real garlic when I sauteed the onions, and added a can of rotel tomatoes with chilis because I didn't have any bell peppers on hand, also added a 28 oz. can of diced tomatoes with juice in the end because I felt the dish needed more of a tomoato-ey flavor. Oh, and I added 1/2 tsp. of ground chipotle for an extra kick. Served with tortilla chips, shredded Mexican cheese, sour cream and avocado. Delish!!!!

Trout Amandine
My ENTIRE familylove this, including a 3 and 4 year old! Really simple. I did not cook the trout with the head on, though, too unappetizing for me!

Morning Glory Muffins I
AWESOME! I just ate 3 1/2 of these things. I love all the healthy ingredients, especially when serving my children! It was a fun activity to make them together with the kids, so they could see fruits and veggies going into these healthy muffins. I took other's advice and used applesauce instead of apple butter. Also, i wanted more nuts on top of the muffins so I did a walnut/pecan combo ~ delish! THANKS for the recipe!!! :) ~Cincy Emily
