Tangy Grilled Pork Tenderloin

Very tasty! I buy pork tenderloin when it is on sale, mix up the marinade in a Ziploc bag, toss in the tenderloin and freeze. This way it is ready to go when it thaws and it's an easy, tasty meal that is ready for the grill.

Caper Baked Chicken

I really am shocked that such a simple recipe is so awesome! For those who had dry chicken, you must have used too large of a pan. This is really fabulous -- even for the non-caper lovers. If you take the time to read the reviews you have to try this!!!! Thanks for the post!

Marvelous Stuffed Mushrooms

Served these with soup as a first course. Loved by everyone - even the folks who weren't excited by mushrooms. I added a couple Tbs. of seasoned breadcrumbs to the mix for texture. Really nice.

Crustless Spinach Quiche

5 stars for ease and 5 for flavor. I used 2 bunches chopped green onions and 2cups lowfat Monterrey Jack cheese and sprinkled parmesan on top since that's what I had. Great SouthBeach Diet breakfast! Thanks!

Steamed Lobster Tails

Sadly, I am allergic. I made two 4 oz. tails for DH. Along with the salt, I added garlic powder to the boiling water. Cooked them for 5 mins. 30 seconds. I also added garlic powder to the melted butter. He loved them and said they compared to restaurant quality.

Appetizer Mussels

In terms of ease and presentation - excellent. Taste -- average. Seemed dull to us. Next time I will make the sauce with additional spices, cook the seafood by itself and pour the sauce on top.

Simply Parmesan Chicken

Really moist. Baked in toaster oven for 30 minutes then turned it off and topped with sauce and cheese and left it in the oven until the cheese melted. Served with whole wheat pasta topped with veggies. Yum!

A big hit with everyone. I used 2 onions, orange bell pepper, added mushrooms and used Focaccia bread. Re: paragraph 5 - it confused me, so I added each spice only once and it turned out great.

Lemon Cream Pasta with Chicken

Had a fresh lemon from a friend's tree, so I gave this a try. Much better than I expected. Nice change of pace. I did add about a cup of quality parmesan to the sauce. Husband claims to hate lemon chicken, yet there were no leftovers. Try it!
