Simply Parmesan Chicken

Really moist. Baked in toaster oven for 30 minutes then turned it off and topped with sauce and cheese and left it in the oven until the cheese melted. Served with whole wheat pasta topped with veggies. Yum!

Restaurant-Style Hashbrown Casserole

Awesome. Our new holiday favorite. Accidentally put 1 lb. cheddar and added a cup of sour cream. 1/2 cup melted butter on top is too much though. Made it the day before and reheated in the microwave. Works for me!

Roasted Beets with Feta

My first attempt at roasting beets. I used the toaster oven and it worked perfectly. Used 1T dried parsley instead of fresh and cookecd the diced shallots in spray butter before adding to the dressing. My DH who didn't even want to try them loved them. Who knew?

Beer Cheese Philly Steak Casserole

A big hit with everyone. I used 2 onions, orange bell pepper, added mushrooms and used Focaccia bread. Re: paragraph 5 - it confused me, so I added each spice only once and it turned out great.

Green Chile Frittata

Tastes like take out! I added some fresh cracked pepper, garlic powder and a splash of homemade salsa before baking. Do serve with sour cream. Don't miss out -- try it!

Tomato Gorgonzola Soup

The seasoning is so good that the topping is not needed. The olives make it too strong. But I will probably use only this seasoning mix going forward!

Steamed Lobster Tails

Sadly, I am allergic. I made two 4 oz. tails for DH. Along with the salt, I added garlic powder to the boiling water. Cooked them for 5 mins. 30 seconds. I also added garlic powder to the melted butter. He loved them and said they compared to restaurant quality.

White Chili

Curiously tasty. I browned half an onion in butter and then cooked the turkey in the same pan. Also used chicken stock vs. water. I used Yancey's Fancy Peppadew cheese. Huge hit and oh, so easy! It's on the winter rotation.

Crustless Spinach Quiche

5 stars for ease and 5 for flavor. I used 2 bunches chopped green onions and 2cups lowfat Monterrey Jack cheese and sprinkled parmesan on top since that's what I had. Great SouthBeach Diet breakfast! Thanks!

Very good! I added a container of sliced mushrooms to the meat mixture and used dried onion flakes instead of fresh (I was tired). I also used 2C. of cheddar and pre-made mashers from the grocery. Such good food, such little effort!

Buffalo Chicken Dip

Went over great with the family. I heated and layered the cream cheese mixture in the 9x13 pan. I mixed the chicken and sauce in a to go container. Then heated it when I arrived at the party and layered it on top. I will add blue cheese sprinkles on top next time so it is easier to tell what it is! Served with celery bites.
