Roasted Beets with Feta
My first attempt at roasting beets. I used the toaster oven and it worked perfectly. Used 1T dried parsley instead of fresh and cookecd the diced shallots in spray butter before adding to the dressing. My DH who didn't even want to try them loved them. Who knew?
