Holiday Chicken Salad

Corned Beef and Cabbage I

We had a pot-luck muti-culture day at work and our team had Ireland. I used this recipe and it is the first time I have made corned beef and cabbage. It was simple, delicious and a crowd pleaser! I followed the reviewers suggestions to use low sodium beef broth and white potatoes, and they potatoes did a great job of neutralizing the salt. Only mistake I made was doubling the potatoes, carrots and cabbage for double the corned beef. Had tons of left over potato and carrot! Loved, loved, loved it....will definitely try again, and again.

Creamy Dill Cucumber Toasties

Simple, impressive, elegant! I used a Japanese cucumber and sliced the bread and cucumber at a slant, served it to my RV camping group and got rave reviews. Even my fussy husband ranted and raved.

Apple Dumplings I

WOW! I served these at our RV/camping event and everyone loved them! I used Gala apples (my produce manager recommended them after looking at the recipe) and the Pillsbury Grands. I also used less than half the water as recommended. Dee-lish and easy to make!

Black Bean and Corn Salad II

Great recipe and very colorful. I substituted kidney beans for black beans and left out the cayenne because I am allergic to it but it was still very tasty and received great compliments.

BLT Dip

This was a surprising offer for my camping buddies. I put it on a bed of chopped Romaine letters with a circle of canned, stewed tomatoes. My store was out of melba toast so I used toasted bagel chips. It was a big hit at the beach party.

I fixed this for the camping group Saturday dinner and there were no left overs. I had space problem in my motorhome so I opted for canned green beans instead of fresh and still got rave reviews.

Bacon Quiche Tarts

Our camping group gobbled these down. Working with the crescent rolls in the muffin tins was a bit awkward, but I simply need practice. I used light cream cheese and don't think the recipe suffered for it. Great brunch addition!
