Wow are these great! I rolled out the sheets nice and thin, cut into circles and spooned a ricoota mixture onto them, folded, sealed and called it ravioli and they were seriously the best ravioli I have ever had. the noodle is so delicate and tender and both my kids gobbled up the raviolis. I never mentioned they were green because of the spinach and they didn't seem to notice there was a vegetable in there! Yummy! Thanks so much!
