Homestyle Turkey, the Michigander Way

This was perfect, my first time cooking cristmas turkey, and I didnt want it turning out dry. This method provided me with a moist turkey, and very flavourful. Prpped my turky the day befor by brining with salt and some fruit. And used additional herbs thyme and rosemary for my 2.5 kg turkey. Cooked for around 3+ hours covered and aorund only 15 minutes uncovered as my turkey popper had already popped. All at GM4. Will definately use again!. A keeper

Roast Leg of Lamb

Pure bliss, used for the first time at christmas '09. I prepped my leg of lamb 2.0kg the day before, with salt and using this as described but minced garlic instead of chopped and spooned in slits. Also used dried rosemary and thyme as shops were completely out on Christmas EVE. Baked at GM4, for around 2.75-3hrs. Turned out medium rare, but perfect. Full flavour, definately use this again. A great pleaser, kudos!

Dark Chocolate Cake I

Mistook the cocoa powder for 200g instead of 80g, and put the whole mix into 1 9inch springform. Baked for 1.5hr and turned out great. The creaming didnt really turn the mix light and fluffy for some reason, but the cake was nt dense and was ok lightness. I subbed half white sugar for brown sugar, and even though I added 120g more cocoa powder by istake the cake was just the right sweetness. It wasnt at all dry, as i heeded the advice of waiting for the mixture to cool before proceeding. Would definately try again and create 3 batch tiers! Overall would seem to be an A+ recipe. Covered it with chocolate ganache from the website. Brother said it was hugely satisfying! :D

Chocolate Ganache

A tad disapointed, as abit oily even though I followed the recipe to the T. I halved the recipe for a 9 inch chocolate cake. Was more than enough. Would defo search for a different recipe, although tasted like a nice dark icing, and solidified over time.

Bourbon Whiskey BBQ Sauce

If i could would give it a 4.5!!! a great recipe and really lives up to the hype. I was first apprehensive after simmering the onions in used a mixture of JD and jim bean as i didnt have enough. I doubled the recipe and used only 75% the designateed amount of whisky. After i made it, it was way too tangy but after a day the flavours definately blended together. This is defo a put it in the fridge and wait sauce, as it get better and better as the days go by, bt defo need to add abit more sugar nxt time.

Big M's Spicy Lime Grilled Prawns

Followed this to the T aside from I had no more green chillies so had to use 1 green and 1 red as a substitute. On the whole was disappointed with a high star recipe. It was too sour and the the prawns turned out a poor texture, even though I marinaded it for 2.5 hrs only. Th eonly pro was that the marinade did surprisingly impart alot of flavour abeit sour. Would not try this again.

A great recipe although i did think there was too much salt and not enough lime, i had to add the juice of 3 imes to counteract the saltiness. I used red onions and cherry tomatoes. A bit of tweaking makes this a five :D

Sarah's Banana Bread Muffins

portion size was really good!, made 10 good sized muffins and 2 smaller, diddly ones. Used only 25g of white sugar and 75g of brown sugar, and added 1 tsp of vanilla essence and some cinnamon as per other reviews. Added abit more baking soda to make the muffins more puffy and big!, worked a treat, and baked them for just over 25 mins at 165, but this was still too hot, next time ill change the temp to 160 and check the muffins before 25 mins. They browned too much. I thought the muffins were abit too dry and texture abit too dense for my liking, kept them over nght and they turned abit gooey and sticky on the outside. But my friends seemed to like them loads. Also added in some chocolate pieces, made loads of difference, cos the muffins werent bananary enough, next time ill wait till my bananas are really ripe before use.

Honey Lime Chicken Wings

tried these yesterday and thought they were amazing!!! i used more honey lime mixture to chicken ratio, there seroiusly wasnt enough for that many wings, and i made a couple of other alterations. I wanted them healthier so instead of deep frying the wings i covered them in flour as stated and shallow fried them in a pan for one to two minutes on either side to get the crispy exterior, and then i grilled them for 30-40 minutes at 210 degrees brushing them with the honey-lime mixture every 10-15 minutes. I did a taste test before i put the mixture on and loved it, it was sweet with the honey and had a subtle tangy hint of lime. Next time though ill put aside some the the mixture and dumped the wings and the mixture in a bag after ive baked them and shake them around so its all covered with the mixture after ive baked/fried them as stated in the recipie so that the honey-lime taste is stronger on the wings. Its a really good alternative to your hot wings :)

Banana Cake VI

followed this recipie to the letter, found it absolute delish! made it a abit thicker though, and i dont think it cooked all the way through cos it was abit eggy in the middle :( but i didnt like the frosting though, way too sweet and didnt mix well. Will definitely be trying this again but with diffrent frosting.

Lemon Herb Barbeque Sauce for Chicken

didnt have breasts at hand so i tried it with a whole chicken, marinaded the chicken for a whole day with the sauce, even spooned the marinade under the skin andin the cavity. Cooked it the next day over veg that i put in the baking tray with the chicken. wasnt impressed with the effect on the chicken...no flavour. Tried serving it with a dip with potato wedges for friends, they loved it...but i didnt tell them how much it consisted of oil :D next time ill try it with breasts

Roasted Lemon Herb Chicken

thought this was ok, tried it on a whole chicken, rubbed 1/3 of the marinade under the skin, and divided the rest into the cavity of the chicken and drizzled it over the skin. didnt impart much flavour into the chicken itself though. ps subbed garlic powder for minced garlic and also added half an onion into the chicken cavity whilst baking :)

Baked Teriyaki Chicken

loved it! tried it a gazillion times since only made a couple of changes after searching for other teriyaki recipies, added a touch of honey into the marinade and i left the chicken thighs in the marinade overnight. Made it last week and everyone loved it, but i subbed ground ginger for real grated ginger, and think i put a little too much in :(
