Barbecue Tofu Sandwiches

This is a great recipe, and so quick and easy! I don't know if it's possible for a recipe to be fool proof, but this one definitely comes close. My whole family loved this one. Definitely a keeper!

Salsa Chicken

I am amazed that anything this easy can be so good! This is a wonderful recipe! We like it so much that we adapted it for campout use ~ We make foil pouches, add 1/4 cup of rice, half a cup of water, then the chicken, seasoning, salsa, and cheese. Seal up the pouches, and cook over the coals or fire. It takes about 20 minutes to cook. Awesome campout food, especially for tired hikers! This is what my husband brought when it was his turn to provide meals for the adults at a Boy Scout campout, and it was a huge hit! They tried to vote him in as perminent Grub Master (he objected).

Cool Whip Cookies

These are sooooo good! I chilled the dough, and then scooped it with one spoon and scraped it into the powdered sugar with a second spoon. They WERE good ~ gone now!

Peanut Butter Vegetable Chicken Soup

Yum! The peanut butter added a wonderful flavour, and my kids loved it. My husband and I added a little hot sauce, which gave it a little spice. Also, we added a sprinkling of chopped roasted peanuts.
