Rainbow Rotini Salad

Easy and fast to make. Boiling the pasta took 15 minutes, in that time I chopped all the veggies. I added feta cheese to my dish, my husband added olives to his. It was good and I think tomorrow it will be better when the flavors can meld.

Baked Coconut Shrimp

I was really pleased with how this tasted. My only change was adding 1/2 tsp. red pepper flakes since I didn't have cayenne pepper. I did chop the coconut in the food processor, and then added the flakes to mix better. It just needed 7 minutes each side. My were a crunchy texture.

Slow Cooker Stuffing

I made it in the slow cooker on Thanksgiving day. It was good, but the next day it turned mushy and the color was no longer bright, it looked gray!

Holiday Cranberry Sauce

I boiled the cranberries in orange juice instead of water and cut back the sugar to 1 1/2 cups. Don on Recipe Buzz gave me the allspice substitute: combine equal parts of ground cinnamon, cloves, nutmeg, and black pepper. I used 1/4 teaspoon of each except pepper 1/8 in case it was too much. Just made it for Thanksgiving and again for Christmas. Easy!

Lemon Chicken Piccata

Unfortunately even with all the warnings it came out too bitter. I only had the fresh lemon slices in for 5 minutes but it was too late. Adding sugar only made it taste weird - sweet at first and then a bitter aftertaste. I did use 1/2 wine and 1/2 broth, added mushrooms and cornstarch. Didn't have time to start it over. I think if bottled lemon juice was used it wouldn't be a problem?

Bright and Zesty Broccoli

I didn't add orange zest because I didn't have any. I just steamed the broccoli and then added (without measuring) the orange juice, olive oil, pepper flakes and salt. I'm not a big broccoli person so I wouldn't give it a five, but I would make it again.

Glazed Meatloaf II

I had to use a chicken cube instead. Also added some chopped mushrooms plus 3/4 cup of oatmeal instead of the bread. I didn't double the sauce because I only had 1 lb. ground beef not 2.

Grilled Salmon I

Excellent! I sprinkled the salmon with lemon juice and pepper, then it marinated with the soy sauce, brown sugar and olive oil. I didn't add salt and I forgot the garlic. After 2 hours I wrapped it in tinfoil and baked for 15 minutes then broiled open for 3. While baking I made a salad and thickened the sauce with cornstarch. Delicious, next time I want to make it for company, it was that good and easy.

Pork Chops Italiano

Pretty good. I ended up putting it in the oven at 350 for 40 minutes (1/2 time covered) because my stove pan is too small. I kept the spice amounts the same, cut back a bit on the onion and pepper.

Summer Nights Eggplants

I sliced a bit on the bottom of the eggplant so it wouldn't roll. Unfortunately it was small so I had to make adjustments to the measurements. I did add italian seasoning. Next time I could use a can of diced tomatoes instead to speed things up. There was a LOT of stuffing left over, so then I stuffed half a green pepper and half a tomato. Also, it took about a half hour to bake, I even turned up the over to 400. I will definitely make this again, I like the suggestion of also adding ground meat.

Baked Dijon Salmon

Very tasty. I mixed the bread crumbs into the butter by mistake but it was still good. It just made the sauce a paste consistency. I could have cut the servings in half because it made a lot. When I added parsley and pecans I just added a bit more bread crumbs. I seasoned with salt and pepper first not last step.

Good, could use more flavor, not sure what is missing. My can of diced tomatoes had basil, oregano and garlic in it. I didn't add 1 TBL of tomato paste. Next time I will try the suggestions of red peper flakes, nutmeg and serve with couscous.

Pork Marsala

How did anyone fit 4 chops and mushrooms in one pan?? In the end I put it in the oven, it was the only way to get everything to fit together. Didn't seem like anything special to us. I increased the oregano and mushrooms, and omitted the garlic salt, and decreased the butter and oil.

Easy Meatloaf

3 1/2 I only used one lb. of meat, 1/2 onion, 1/2 cup milk, 1 TBL. worcestershire sauce. It seemed like way too much liquid, even after one and 1/2 hours of cooking, it didn't firm up.
