Shrimp Scampi V

3 1/2 stars, a bit bland. Even with adding greek seasoning and red pepperflakes. I did like 1/4 butter and 1/4 olive oil change; plus some cornstarch.

Sunday Afternoon Slow-Cooked Spare Ribs

I used beef spare ribs; 1/2 veg broth and 1/2 red wine, and no seafood seasoning. Instead of minced onion I cut up onion rings and added that. I only browned, not boiled the ribs. It took only 3 hours in slow cooker.

California Grilled Veggie Sandwich

Added mushrooms and green peppers. Started on the Forman grill but it was easier to saute everything together. Ate it on sliced rosemary and olive oil bread. Loved it!

Mushroom Rice

Felt like I am missing something after all these good reviews. Personally, we didn't find it flavorful. If there is a next time, I would double the mushrooms, garlic, onion and parsley.

Perfect Apple Pie

I split the sugar: 1/2 cup white, 1/2 brown and included a tsp. of vanilla. Unfortunately I forgot to add the butter. 7 apples were plenty = 5 stars.

Stuffed Eggplant with Shrimp and Basil

I doubled the shrimp and garlic, halved the bread crumbs, added onion powder, mushrooms, green pepper, and zucchini. I kept three "whole" shrimp on top as decoration. Flavor still seemed bland to us but the presentation looked great. I do want to try it again though.

Fried Rice Restaurant Style

Not sure if this was a three or four star. I added garlic, it needed more carrots and peas, I had no clue how much soy and sesame to add. As a beginning cook, I needed more specifics. I do feel something was missing though.

Ramen Noodle Soup

I increased the soy, added sesame oil instead of chili and increased ginger spice. It was good but mild, like an appetizer before an Asian meal. Glad I added a lot of mushrooms and spinach, for color and taste.

Cousin Cosmo's Greek Chicken

I marinated it in the first 6 ingredients, along with garlic, lemon juice and greek seasoning. Rolled up the spinach, tomato slices and feta. I baked it for 40 minutes. Meanwhile on the stovetop I cooked the spinach, cherry tomatoes in chicken broth with cornstarch. Looks impressive.

Royal Icing III

I have no experience with icing, but I can HIGHLY recommend this recipe now. It is soooo easy to make, and can easily make more on the spot when I ran out. I chose this recipe because it didn't use carn syrup, and didn't require heating on the stove.

Chocolate Pretzel Rings

Easy! Must be patient and start with only a few to find your perfect time. Mine was 2 minutes. I gave up trying to heat the striped chocolates because they just melted right through so I stuck with traditional chocolate kisses. Don't bother with measurements, use up the bags!

Bacon 'n' Egg Bundles

Loved it! I didn't particularly line the bacon properly but it didn't matter. Tricky part was taking it out in one piece but I was able to do. My cooking took 13 minutes. Added salt and pepper, tomato slices and feta cheese.

Oriental Oven Omelet

This didn't appeal to us. Because of the mushrooms and soy sauce, the food color becomes brownish. I think I'd like the loose noodles better, if it wasn't baked in the oven with eggs like a casserole.

Mini Pumpkin Butterscotch Muffins

My only changes were dry whisking first step because I didn't have a sifter. Also replaced butterscotch with mini chocolate chips. I really liked it. Mine did take ten extra minutes to bake though.

Onion Baked Chicken

I used 3/4 dry onion soup mix since I had Italian style Panko crumbs. I didn't bother to measure the mayo and bread crumbs. Just added more if necessary. The mix amount was fine with us, it wasn't too oniony, but boy was it salty. Turns out salt is the second ingredient after onion. Anyway, we enjoyed it, I REALLY enjoyed the fact that it was quick and easy.

Eggplant -- Easy, Good and Tasty

What a yummy change for eggplant! I sprayed the baking sheet with Pam olive oil spray. Kept some skin on by peeling stripes to keep the shape together. You don't really need to measure the ingredients, I did add garlic powder after breading. Could use some more spices too. My husband doesn't eat cheese so I added it to mine and we were both happy.

It really could have used some green pepper. I didn't have hot sauce so I added more chili pepper and also red pepper flakes. Great with biscuits.

Mama's Ambrosia

I made this in under 10 minutes because my MIL was going to drop by! I didn't have time to measure..... so I just mixed in mandarin, pineapple chunks (instead of fruit cocktail), marshmallows, coconut and sour cream. These were the only ingredients I had, no time to chill, and she still loved it!
