About this Cook
I am happily married and made the big move from NJ to Alabama. Luckily I am not working yet which has given me time to adjust to everything else in married life including cooking. Unfortunately we have a small kitchen so I constantly have to clean up while preparing meals so I can have the counter space. My husband has been patient during these changes. He prefers a basic simple meal, especially Greek food while I like to try new recipes. I miss New York restaurants but the fresh seafood in the Gulf Coast is great.
My favorite things to cook
From this site, my favorite things to cook are stuffed peppers, mashed potatoes, coconut shrimp and banana bread. Although I have a shelf full of cookbooks, Allrecipes is sooooo much more useful.
My favorite family cooking traditions
My mom is a fantastic cook and loves to host. So I didn't spend much time in the kitchen other than eating and being in charge of cleaning up. Now that I am married I am learning.
My cooking triumphs
I prefer baking and I figured out why: it is only one item. But when you are making dinner you have to have the main course, the vegetables, the salad and side dishes all need to be done at the same time.
My cooking tragedies
Too salty fish, bland meatballs, crunchy rice, etc,...

Raspberry-Marinated Chicken
I thought this ok. Chicken breast would have been better visually than the chicken thighs that I used, I don't know whether it would affect the taste.I did serve it in a spinach salad with craisins, walnuts, cucumber and celery. I marinated it for 6 hours but honestly it didn't seem to have much of a taste anymore than if I just used a raspberry vinaigrette dressing rather than a marinade. I

Salmon with Dill
I think I like a "sweeter" taste of salmon. We enjoyed it though, and the prep was a breeze.

Honey-Ginger Grilled Salmon
Pretty good. I marinated for an hour. I cooked and thickened the extra sauce but as I was stirring and tasting it, it was very salty. I didn't end up adding it to the finished salmon. The salmon that was baked in the sauce didn't taste salty, only the sauce that I cooked separately.
