Pineapple Zucchini Muffins

I think this needs less oil and less sugar. I used fresh pineapple chopped up really fine andsqueezed out the zucchini.

Slow Cooker Texas Pulled Pork

I followed this recipe exactly but after I removed the pork and shredded it I drained all the liquid out of the crock, added the pork back, and drizzled with a touch of bottled barbeque sauce. I haven't found a slow cooker pulled pork recipe that I don't have to do that in the end. The pork needed salt but otherwise was a good method. We serve ours with toasted (sometimes buttered) french rolls and sweet pickles on top.

Tam's Black Eye Peas

These are out of control GOOD! You can spice them up however but don't leave out the turkey leg! I didn't use sausage, added some bay leaves and celery and used a broth/water combo. I will probably reduce the amount of liquid by atleast a cup next time. YUMMMMMM.

Black Bean Salad

This is a GREAT potluck recipe. I get compliments every single time I make this. I have used halved grape tomatoes before. I usually add an extra lime and only use 1/2 a jalapeno.

Raspberry Almond Coffeecake

This is so simple and delicious. You could use any berries I think. Yes, is is thinner compared to a slice of cake but I like that. I only had to bake mine for 25 mintues so I would definately watch the time.

Hot Milk Sponge Cake I

YUM! Let is be said I am not the best baker, this is actually the first time I've ever baked a cake-- IT WAS SO GOOD! Better than any bake mix I've ever used. This was so easy, too! I used 1/2 & 1/2 instead of milk, "light" butter and added a pinch of salt. I only used 1 tablespoon of milk for the topping and omitted the nuts. The cake was light and fuffy and moist! This is a keeper!

Pizza English Muffins

I ate a version of there growing up and still do... We use our leftover meatsauce. Lightly toast the english muffin, then add meatsauce and cheese, put back in the oven until cheese melts.......they are so YUM and really quick & easy!

Double Chocolate Mocha Trifle

I rarely rate something 5 stars but people LOVED this! I made several changes; Whipped my own whipped cream (added about 1/4 sugar), used devil's food cake instead of brownies & used a chopped up toffee almond chocolate bar. I topped it with whipped cream, then the candy. I served this at a party w/ several other desserts and this one was the show stopper! It's really good! I will make again!

Pina Colada III

YUM! These are not like the premade bottled version, they are much better!! Not very slushy unless you atleast double the ice. I add 1/2 cup more rum and prefer the coconut milk from Thailand....

Cranberry Walnut Slaw

This was DELISH! I subbed green onions for regular onions, added more walnuts (toasted). I found there to be alot of oil & dressing so I'll probably 1/2 the oil and chill out on the dressing next time.

Lemon Soup

I like this soup because it uses so few ingredients, takes very little time and tastes good. HOWEVER, I don't know if it is because I halfed the recipe or my soup got too hot (?) but the egg mixture broke and it didn't really thicken the soup at all. Also, I opted not to beat the white and yolk seperate, I frothed them together very well as I have seen in other recipes for this soup. Either way it was a great quickie soup! I added parsley for color.

Sweet and Spicy Stir Fry with Chicken and Broccoli

As far as stir-frys go, this one is 5 stars. The sauce is perfect but we like alot so I always double. We also add other veggies like carrots and red pepper....This one is in the rotation!

Chicken and Cheese Stuffed Jumbo Shells

This recipe is so yummy! Tastes like chicken parm stuffed shells. I think the keys are *chop chicken really small, almost a mince and *get yummy creamy mozz, not the salty hard rubbery stuff! Will be put in rotation!

Chocolate Pudding Cake II

I like the idea of this recipe, its like a fluffy chocolate cake with a hot pudding sauce but the taste was too floury. It may have been the cocoa powder I used but something still wasn't right with the taste.

Brie Pecan Rollups with Raspberry Sauce

I'm sorry but this just wasn't there for us. The onion/garlic mixture was bizarre with the berries, it was greasy and the cheese came out of the middle. Will not make again.

Amazing Whole Wheat Pizza Crust

Easy recipe. We found one recipe enough for 2 pizzas. They were not very fluffy but were very tasty and healthy. We made a white pizza: Take 2 tablespoons of EVOO and add one cracked garlic clove and 1/4 red pepper flake and let infuse for 1 hour. Add oil on top of crust with 1/2 cup fontina 1/2 cup mozzerella 1/2 cup cooked diced chicken and 1/2 cup thawed and squeezed dry frozen spinach. YUM!

Herb Rubbed Sirloin Tip Roast

Spice blend was very subtle, a little too subtle for our taste, especially with a bland sirloin roast. Also, the cooking time was way off. Will not use again.
