Millie Pasquinelli's Fried Chicken

Love the texture. I used boneless skinless and reduced the cooking times. You can mix up your own season salt pretty easily by googling the recipe. This will be my new go-to.

Hunnybunch's Special Apple Muffins

Toddler (and adult!) approved. I have sweet organic apples so changed the sugar to 1/4 cup white and 1/4 brown. I left the skin on the apples and swapped grape seed oil for vegetable oil with no problem. These are really delish! It seemed like there were too many apples and not enough batter at first but they baked up great. I used a mini muffin tin and baked for about 14 minutes. This one is a keeper.

White Chocolate and Cranberry Cookies

I make these every Christmas. This year I gave them out and everyone loved them. Sometimes I use brandy, sometimes vanilla extract. They are a great texture and hold their shape well.

Taiwanese Pork Chops

These just didn't do it for me. I really wanted to like these because I love pork and five spice. The cornstarch was just weird and the color was unappetizing. Aside from that the flavor was overpowering. Would not make again or reccommend.

Downeast Maine Pumpkin Bread

I've baked alot of pumpkin breads. This one is the best! I usually half the recipe and bake one (large) bread. There is alot of sugar for my taste, I admit, but I wouldn't cut it because it is just that good!

Mango Blueberry Muffins With Coconut Streusel

In an attempt to lighten these up I made the following changes: 1/2 whole wheat flour, 1/2 regular flour 1/4 cup applesauce plus 1/4 cup canola oil for butter Reduce sugar to 3/4 cup I made 18 mini muffins without the topping and 4 big ones with the topping. Excellent, but even with the sugar reduced to 3/4 cup I found these sweet, it may be just a personal thing.

Banana Blueberry Muffins

This was a good base recipe for me. I made the following changes: 1.5 cups whole wheat flour, 1/2 cup regular flour. 2 whole eggs instead of 4 egg whites. 3 tablespoons canola oil added. I did 1/2 cup blueberries and 1/2 cup raspberries. Made into 24 mini muffins. My 13 month old loves these.

Pineapple Zucchini Muffins

Slow Cooker Texas Pulled Pork

I followed this recipe exactly but after I removed the pork and shredded it I drained all the liquid out of the crock, added the pork back, and drizzled with a touch of bottled barbeque sauce. I haven't found a slow cooker pulled pork recipe that I don't have to do that in the end. The pork needed salt but otherwise was a good method. We serve ours with toasted (sometimes buttered) french rolls and sweet pickles on top.

Tam's Black Eye Peas

These are out of control GOOD! You can spice them up however but don't leave out the turkey leg! I didn't use sausage, added some bay leaves and celery and used a broth/water combo. I will probably reduce the amount of liquid by atleast a cup next time. YUMMMMMM.

This is a GREAT potluck recipe. I get compliments every single time I make this. I have used halved grape tomatoes before. I usually add an extra lime and only use 1/2 a jalapeno.

Raspberry Almond Coffeecake

This is so simple and delicious. You could use any berries I think. Yes, is is thinner compared to a slice of cake but I like that. I only had to bake mine for 25 mintues so I would definately watch the time.

Hot Milk Sponge Cake I

YUM! Let is be said I am not the best baker, this is actually the first time I've ever baked a cake-- IT WAS SO GOOD! Better than any bake mix I've ever used. This was so easy, too! I used 1/2 & 1/2 instead of milk, "light" butter and added a pinch of salt. I only used 1 tablespoon of milk for the topping and omitted the nuts. The cake was light and fuffy and moist! This is a keeper!

Pizza English Muffins

I ate a version of there growing up and still do... We use our leftover meatsauce. Lightly toast the english muffin, then add meatsauce and cheese, put back in the oven until cheese melts.......they are so YUM and really quick & easy!

Double Chocolate Mocha Trifle

I rarely rate something 5 stars but people LOVED this! I made several changes; Whipped my own whipped cream (added about 1/4 sugar), used devil's food cake instead of brownies & used a chopped up toffee almond chocolate bar. I topped it with whipped cream, then the candy. I served this at a party w/ several other desserts and this one was the show stopper! It's really good! I will make again!
