Homemade Black Bean Veggie Burgers

Reviewed: Sep. 26, 2010
I thought these burgers were very good. I started with dry beans, used chili sauce, a "flaxseed egg" (1T ground flaxseed with 3Twater), and more than 1/2c bread crumbs.

Zucchini Parmesan

Reviewed: Aug. 27, 2010
Pretty good recipe but definitely has room for imporvement. I steamed my zucchini rather than boiling it but there was still way too much water in the finished product. I will make this recipe again but I think I will alter it a bit.

Rasta Pasta

Reviewed: May 18, 2010
I'm sure this pasta gets it's name from the red, gold and green peppers but, rastas do not eat chicken.

Easiest Peanut Butter Fudge

Reviewed: May 7, 2009
I made this recipe exactly as directed and I was not impressed at all, it was just okay. I could taste the powdered sugar stronger than the peanut butter. Next time I will follow some of the suggestions posted by others.

Young and old alike loved this bread, it was a big hit. I used two 9x5 pans, baked for 50 minutes then covered with foil for another 10 minutes. I also used Ener-G egg replacer, to make it vegan,in place of the real egg, other than that no substituions. Definitely a keeper!!!

Banana Crumb Muffins

Reviewed: Aug. 10, 2008
Yummylicous!!! I followed the recipe, but adapted it to suit my vegan family. I used Eneg-G egg replacer and vegan margerine. I used cupcake liners and baked them for exactly 18 minutes. Next time I will spray the top of my muffin tin because my topping overflowed and melted to the top of the muffin pan, in turn sticking to the pan. Thanks for posting!!!

Debdoozie's Blue Ribbon Chili

Reviewed: Aug. 2, 2008
The first time I made this I used morning star veggie crumbles in place of hamburger. I used chili mix II, but it was too spicy for me. Lastnight I made this recipe again and it was a HUGE hit, with vegans, veg heads and carnavoirs alike!!! I used a whole onion, veggie crumbles, subbed half mexican tomatoes for the sauce, added 5 heaping T. of chili seasoning pluse a 1/2t of cumin.I used the Chili Seasing MixII from this site, but I cut the cayenne in half because it's just too spicy for me.

Hummus III

Reviewed: Jul. 21, 2008
Delicious! Reserve the liquid from the beans because you will probably have to add it to the hummus, because I think it's just too dry w/o it. I used about 1/4 of a cup of liquid. I used 3 cloves of garlic, a little less than 1/3 cup tahini. I served this at a bday party and it was a big hit, definitely a keeper...thanks for posting.

Fantastic Black Bean Chili

Reviewed: Apr. 14, 2008
I added about half a can of drained corn and I used MorningStar Farms (vegan) veggie crumbles in place of the ground meat. It was very good, but in my opinion there is room for imporvement. I think next time I will probably use mexican style stewed tomatoes, increase the seassoning and probably add a bit of cumin. By the way this makes a very big pot of chili, way more than 6 servings.

Grandmother's Buttermilk Cornbread

Reviewed: Apr. 14, 2008
This is the best cornbread I have ever tasted, it's perfect. I had to make a couple of changes to make it vegan, I used non dairy (nucoa) margernine, put 1T of vinegar in my soymilk to make "buttermilk" and used Ener-g egg replacer. Definitely a keeper, thanks for posting.

Andrea's Pasta Fagioli

Reviewed: Mar. 30, 2008
This was a very good recipe. I couldn't find canned navy beans, so I used great northern and I used a non dairy parm substitute. I used macaroni for the pasta and cooked it seperately, the added the pasta to each individual serving. Even though it good as is, I think next time I will add some veggies to it. Oh ya, I used 4 cups of veg broth and 1 cup of water.

Spinach Chickpea Curry

Reviewed: Feb. 23, 2008
This recipe is very good. I wasn't sure about the curry paste, the store carried red and green curry paste.I decided to try the red, but I don't really like it. I'm not sure if the green is better, but I plan on trying it. Anyhow, I added about 1 and 1/2 to 2 teaspoons of garam masala and that really made all the difference, yummy!
