Corn Dog Casserole

Reviewed: Jan. 11, 2008
Good for vegetarians too! My husband loved it with mustard on the side. Updated! I have made this a bunch of times and we all love it. I just mix everything together and I cut the dogs smaller so it's easier for my 20 month old daughter.

This was so easy but tasted so good! I used fat free ricoota, part-skim cheeses and frozen chopped spinach. It was GOOD!

Basic Microwave Risotto

Reviewed: Feb. 10, 2008
This was too easy! Nice recipe. I needed something that I could make with whatever I had in my pantry. I used red wine because I was out of white. It came out sooooo tasty. Of course, it's not the same as the real deal, but it's great for everyday dinners. Thanks!

Crowd pleaser. Used one extra clove of garlic, garden chives instead of parsley and green onions. Very adaptable.

Apple Pecan Cornbread Dressing

Reviewed: Dec. 1, 2009
This is so yummy. Served for Thanksgiving twice. I used a pan of cornbread from my grocer's bakery one year, a box of Jiffy the other time- both were great. First time I followed recipe as is. Super delicious! Second time did only 1 cup apple juice and one cup veg broth. Delish! Used gala apples.

Spiced Slow Cooker Applesauce

Reviewed: Sep. 27, 2010
My first time making applesauce! I have a ton of apples, so I doubled evrything except I left the brown sugar at 2/3 cup. It was still quite sweet. So delicious! Everyone loves and I made 3 times so far (apple picking season).

Quick Black Forest Cake

Reviewed: Jan. 23, 2011
The recipe was a little vague, but I wound up with a 5 star cake for my daughter's 2nd birthday party. I made a huge layer cake- 2 9X13 cakes. In each cake I used 1 devils's food mix (dry mix plus I added 1/2 cup oil and 1 cup water from box directions) ,3 eggs, 1 pouch non-instant pudding (not prepared), 1 can cherries, reduced to 1/2 cup MINI choc chips, reduced to half tbs almond extract. I used 1 box of instant pudding (prepared) for the filling between the layers. I made all this the night before and layered, wrapped in plastic wrap and refrigerated. I did not use the choc glaze. I used whipping cream and some conf sugar with dash of vanilla for topping. I put the rest of the bag of mini choc chips up the sides of the cakes. I used some reserved cherries for garnish. Next time I will get about 12 fresh cherries for garnish instead. This was SOOO good and almost every guest took home seconds. Thanks for the recipe!

Spanish Rice II

Reviewed: May 6, 2008
Yum! This had a kick from the chili powder but don't be scared. I'm a wimp with spices and the chili powder is totally on your taste buds but its a good flavor. Really good tasting and reheats well. I also used vegetable stock instead of water and I used the whole green bell pepper, why not? Very nice recipe.

Vegetarian Burrito Casserole

Reviewed: Apr. 6, 2009
I made this in the 8 X 8 pan and cut into eighths like a pizza, so they were served as triangles which presents nicely. I love this recipe, it's easy and delish and reheats wonderfully. My only complaint is that the sodium level is quite high.

Shredded Brussels Sprouts

Reviewed: Dec. 1, 2009
I gave 5 stars because if I had used bacon I know it would have been out of this world. I am a vegetarian though, so I omitted the bacon. It was good for a regular dinner but no wow factor (I served for Thanksgiving).

Sean's Falafel and Cucumber Sauce

Reviewed: Apr. 25, 2013
This was delicious. I did change some things just because I am watching my calories. My changes included: omitted salt, reduced breadcrumbs to 1/2 cup, and baked the patties at 375-400 degrees for 10 minutes on each side. I also made smaller patties, this recipe yielded 16 smaller patties. For the sauce I used Hellman's Light Mayo. I made everything the night before, then kept in fridge until ready to bake next day. The sauce was beautiful, and probably benefited from making a day ahead. Next time, and there WILL be a next time, I will make a double batch and freeze half.

Spinach Brownies

Reviewed: Oct. 20, 2008
Used a little less butter as recommended and they came out great! Everyone at the party loved them. They are nice and firm and would probably travel really well. Added after second time: used the full amount of butter- man there was wayyyy too much butter. Will definitely use less as in the first time making them. Also- I was running late and put them out before they cooled enough. They don't taste the same piping hot. Take care in planning enough time to have them at room temp.

Praline Sweet Potatoes

Reviewed: Dec. 1, 2009
This is very rich. I served for Thanksgiving. It is delicious but next time I will cut the topping in half as it is quite thick and takes away from the sweet potatoes as the main ingredient.

Baked Omelet

Reviewed: Jan. 20, 2010
I made for Christmas brunch this year and everyone loved it! I made one mushroom (1 package presliced) and one with ham. People especially liked the mushroom one. I think that people thought more work went into it than actually did. It was EASY and it was made before guests arrived so I wasn't busy prepping, it was in the oven already.
