Fast and Easy Tofu Lo-Mein

It's easy and tastes good. I use oriental ramen noodles and add some fresh steamed broccoli to it.

Mock Tuna Salad

Awesome thanks so much for the recipe. I eyeballed all the condiments and probably used more than two tbsp mayo if I measured. This is good! My husband is allergic to tuna and he was nervous that I was serving tuna to him until I explained what is in this.

Easy Vegetable Pot Pie

Gnocchi in Fontina Sauce

This was ok. I only used 4 tbsp butter and skim milk. It looked to thick so I added some more milk. It was nice and creamy on the stovetop , but my husband was late and by the time we ate the sauce was gloppy.

Make Ahead Lunch Wraps

Taco Lasagna

I used flour 10 inch tortillas and two bags of morning stars veggie crumbles instead of beef as I am a vegetarian. This was a bit spicy for me and my toddler, maybe because of the meat substitute having less fat than beef? It wasn't crazy spicy, but I will cut the cayenne and chili pepper in half next time. Also, had a bag of Cheddar Jack in the fridge- so convenient and only use the 2 cups for everything. Hubby LOVED this. I froze half of the casserole and think it will reheat nicely.

Tofu Parmigiana

UPDATED to from 4 stars to 5 as I have made this dish for family dinners at least 20 times. This was easy to make and took a little less than the time stated which is great. I double the tofu. I used an egg instead of water and served over angel hair pasta with veggies on the side. Will make like once a month! Thanks!

Quick Black Forest Cake

The recipe was a little vague, but I wound up with a 5 star cake for my daughter's 2nd birthday party. I made a huge layer cake- 2 9X13 cakes. In each cake I used 1 devils's food mix (dry mix plus I added 1/2 cup oil and 1 cup water from box directions) ,3 eggs, 1 pouch non-instant pudding (not prepared), 1 can cherries, reduced to 1/2 cup MINI choc chips, reduced to half tbs almond extract. I used 1 box of instant pudding (prepared) for the filling between the layers. I made all this the night before and layered, wrapped in plastic wrap and refrigerated. I did not use the choc glaze. I used whipping cream and some conf sugar with dash of vanilla for topping. I put the rest of the bag of mini choc chips up the sides of the cakes. I used some reserved cherries for garnish. Next time I will get about 12 fresh cherries for garnish instead. This was SOOO good and almost every guest took home seconds. Thanks for the recipe!

Gourmet Sweet Potato Classic

I cut the white sugar to 1/4 cup and the brown sugar to 1/2 cup and used 6 large oven roasted sweet potatoes. Came out great!

Honey-Topped Sweet Potato

Spiced Slow Cooker Applesauce

My first time making applesauce! I have a ton of apples, so I doubled evrything except I left the brown sugar at 2/3 cup. It was still quite sweet. So delicious! Everyone loves and I made 3 times so far (apple picking season).

Banana Praline Muffins

I put these in mini muffin tins. Served at Xmas brunch and hubby's side liked them. Brought to my side of family the next day and they didn't like them. I guess they weren't expecting the pancake batter. I think that they might have come out different because i used mini muffins so maybe the dollop of sour cream was too small. Still a good recipe.

Addictive Sweet Potato Burritos

Delicious- I am no stranger to combining sweet potatoes and black beans (I make a quesidilla with monteray jack cheese and green onions) so I knew my family would love this. Changes- black beans, accidentally forgot the chili powder, and started with 1/2 cup of water then eyeballed it to a good consistency which was almost 1 cup water total. I bought 2 pkgs of tortillas (16 total) and wound up making 15 burritos. I froze half as reviewers have said they reheat good.

Baked Omelet

I made for Christmas brunch this year and everyone loved it! I made one mushroom (1 package presliced) and one with ham. People especially liked the mushroom one. I think that people thought more work went into it than actually did. It was EASY and it was made before guests arrived so I wasn't busy prepping, it was in the oven already.

Butternut Squash Bisque

So delicious. I knew when I cut open the large squash and it was a beautiful vibrant orange that it would be good. I roasted the squash for about 45 minutes. I hardly had any onion, less than 1/4 cup and cut up 3 carrots which actually was like 1 1/4 cup, probably making mine sweeter, but it came out super delicious.

Sunday Best Fruit Salad

Apple Pecan Cornbread Dressing

This is so yummy. Served for Thanksgiving twice. I used a pan of cornbread from my grocer's bakery one year, a box of Jiffy the other time- both were great. First time I followed recipe as is. Super delicious! Second time did only 1 cup apple juice and one cup veg broth. Delish! Used gala apples.

Shredded Brussels Sprouts

I gave 5 stars because if I had used bacon I know it would have been out of this world. I am a vegetarian though, so I omitted the bacon. It was good for a regular dinner but no wow factor (I served for Thanksgiving).
