Mom's Apple Fritters

Never made fritters before. Followed recipe exactly and they came out great. I rolled half in cinnamon sugar and half in powdered sugar.

Caramel Filled Chocolate Cookies

These were not hard to make and were yummy. I used the caramel hershey kisses. I'd say about 1 out of every 6 cookies burst while baking, but I just shoved the caramel back towards the cookie with my spatula and let them dry like that. I used for Christmas cookie tray platters, and they were a bit sticky and gooey for that but they taste great so who cares!

Snickerdoodles I

These are so good! I read through reviews and made sure to use the butter flavored crisco. I made two batches and they both came out so different. The taste was pretty much the same but one batch spread out and yielded a flatter cookie, while the other did not spread as much and was puffier. I tried to do the same thing, so not sure what I did different, lol. Either way, both were awesome. Lovely!

Dark Chocolate Cherry Fudge

This was easy and came out well. I am not that well versed in making fudge, but I will continue to look for another recipe that might be more like what you buy in the stores (silky smooth texture). It was lovely and really not too much trouble though. Nice addition to my Christmas cookie trays.

Tiramisu II

Wow! This was my first attempt at a tiramisu and I don't need to ever search for another recipe! I read through many of the reviews and did make some tweaks based on what I had read. Most notably: 1)Make 48 hours ahead. 2)Double the rum and coffee. 3)Use your kitchenaid to mix the yolks, sugar, and then milk. Pour into bowl and set over pot (as a double boiler). STIR CONSTANTLY and even a few times while chilling. I wound up being on the stovetop for 12 minutes. Mine never reached a boil, but I was looking for the change in color and consistency as noted in reviews. It also firms a bit more in the fridge. I used the kitchen aid to beat the ROOM TEMP marscapone into the chilled yolk mixture. 4)My store did not have the soft lady fingers so I wound up using the cookie like 'hard' version, Bellino Savioardi. I used about one and a half 7 ounce packages. I put them under the liquor/coffee mixture and rolled a few times then pulled out. Did not let get soggy, and after the 48 hours they were all soft and pleasing. I will ONLY use the hard lady fingers now! 5) I used a 10 inch spring form pan, and I added about a tbsp of sugar to the heavy cream. THANKS SO MUCH! AWESOME RECIPE! Update: Made it again 2 weeks later for Christmas Eve and came out the same- wonderful recipe! Everyone raved and there was none left.

Bourbon Balls II

I did not have light corn syrup so used dark instead. The amount of liquor in the recipe is fine! They taste a lot like bourbon- I'd be scared to double it. My co-workers all loved this, except for one woman who just doesn't like bourbon. I also put the wafers into my food processor. About one-third of a box of nilla gave me the cup of crumbs. Also, I only got 30 balls and used a teaspoon for making them. Great recipe!

Vegetarian Link Gravy

I was embarassed to serve this at Thanksgiving, sorry! It was so thick and really unappealing looking. No one touched it. (we have a couple vegetarians including myself). The flavor was lovely though. I made it the night before and it was thick, but I guess overnight it thickened a lot more. I also instinctively reduced the amount of oil. I wish I had read the reviews before hand, because adding a lot more broth might save it. I also added dried thyme. I also ran it through the food processor becasue the ground up chunks of the sausages was just unappealing for a Thanksgiving dinner table. So, will try again, tweaking it becasue the flavors are so lovely and hope to come back and make the rating higher. Also, may have to make immediately before serving.

Zucchini Cornbread Casserole

I followed recipe except I only used 5 ounces of cheese, all in the mixture. I squeezed out the zucchini after shredding. This came out lovely. I cut into 16 squares as I was serving at a BBQ. Easy Peasy and reheated well too.

Delicious Black Bean Burritos- Stacey's Version

This is good for a quick and easy weeknight dinner. It is very filling! I used 4 low carb tortillas, and lofat cream cheese and only 1 tbsp of oil. I also added some shopped fresh tomatoes to the bean mixture.

Connie's Zucchini "Crab" Cakes

These were yummy. I only used 1 tbsp of oil, and used a brush to coat the whole pan with it, and it was just enough. I was prepared to add another tbsp of oil after flipping but it didn't need it and I was glad because I'm watching my calories.

Tofu 'Fish' Fillet Sandwiches

Giving 5 stars because my husband (who is allergic to fish) raved about it like crazy. We eat tofu all the time and this is a nice new way to do it. I only set out 1/2 cup of bread crumbs which was more than enough. I also couldn't find kelp powder, so used some dried seaweed strip that I ground up myself. It was a nice dinner, I would like to try with the kelp powder if I can find it in my market next time. Also, I used lite firm tofu, and I always freeze it, then thaw in the fridge because I like the texture better that way.

Sean's Falafel and Cucumber Sauce- Stacey's Changes (Double Batch)

This was delicious. I did change some things just because I am watching my calories. My changes included: omitted salt, reduced breadcrumbs to 1/2 cup, and baked the patties at 375-400 degrees for 10 minutes on each side. I also made smaller patties, this recipe yielded 16 smaller patties. For the sauce I used Hellman's Light Mayo. I made everything the night before, then kept in fridge until ready to bake next day. The sauce was beautiful, and probably benefited from making a day ahead. Next time, and there WILL be a next time, I will make a double batch and freeze half.
