Cheesy Italian Tortellini

Even better the next day. Used super cheap canned sauce, and it still tasted great! Added onion, garlic and italian seasoning to the browning meats. The house smelled sooo good while it was cooking! Will be making this again and again.

Artichoke Spinach Lasagna

OMG!!! This is soooo good! The only reason I gave it 4 stars was because I tweeked it according to other reviews. I used the Quick and Easy Alfredo sauce from this site, sauteed the onion and garlic in EVOO, and added some basil. I used oven-ready noodles. I used light butter in the Alfredo sauce and light cheese in the lasagna. Simply amazing!!!!

Boilermaker Tailgate Chili

A huge hit at dinner this weekend! Adjusted slightly to decrease the heat: 1 T. of chili powder and 1/4 tsp of cayenne pepper. Did everything else the same and it was amazing!

Easy Pork Roast

Amazing flavor and very forgiving. Hubby tried this last night. He messed up a bit and it still turned out well, bless his heart. Our roast was almost 8 lbs and he only used seasonings for a 4 lb roast. We didn't have any shallots. He also forgot to cover with tin foil. Yet, it was a HUGE hit!!!!! Will add to the rotation!

Chili Rellenos Casserole

Excellent! Followed others' advice and used an 8x8 pan as well as enchilada sauce instead of tomato sauce. Took about 45-50 minutes to bake, and was delicious!!!

Shredded Beef Chimichangas

Medium heat was way too hot. All of the water burned off after 20 minutes, and after an hour, the rest of the seasonings and the meat were burned to a crisp. Disappointing, because it looked so tasty. Might try using the slow cooker, if I ever decide to try this again.

Margarita Cake with Key Lime Cream Cheese Frosting

Disappointing. These were nothing like what I had imagined. I added 3 T. of tequila, which made the frosting very runny. I don't know what I did wrong, but won't be making these again....

Salsa Chicken Rice Casserole

Based on reacder recommendations, sauteed cut up chicken with chopped onion, some garlic and southwest seasoning. Then added the soups and salsa, simmering until chicen was done. Used brown rice and Trader Joe's corn salsa. Added southwest seasonging to each layer. Delicious!

Split Pea Soup

DELICIOUS!!!! Made a few minor changes: used chicken bouillion, added 2 bay leaves, added some garlic, and used 2 cups of diced turkey ham (to save time and calories). This was a huge hit and will become a regular once the weather gets cooler!

YIKES! I should have known when I added all that cayenne pepper -- this had way too much heat! Even my DH, who loves extra spicy things, thought it was too hot. Did not enjoy this. Sorry.

Slow Cooker Italian Beef for Sandwiches

Delicious! Utilized reader recommendations and used beef broth instead of water as well as doubled the seasonings. Also broiled the sandwiches with provolone for a heavenly deli sandwich. Save the liquid and use for dipping. Simply divine!!!!!
