Raspberry and Almond Shortbread Thumbprints

First thing, these are GREAT! Now for the rest. Read a lot of reviews and here's what I did to get these perfect. Used ingredients as listed no more no less. I DID NOT use the icing and I'm glad I didn't as these have a taste you do not want to cover up. After mixing up the dough I did stick the dough in the refridge for about 10 minutes. Dough will be crumbly but the heat of your hands rolling out the balls will make everything OK. Fixed two cookie sheets (got 24 cookies total out of this)and after putting the raspberry filling on I put the trays back in the refridge for another 10 minutes. Because of this they took 19 minutes to cook. It's worth noting that the refridge time played a critical roll in the cookies retaining their shape. I used the end of a small juicer for the depression in the cookies and as a couple of folks suggested put the jam in a sandwich baggie, cut a very small corner off the bag and squeezed the filling out into the cookie depression. Works really well. Don't wait for Christmas to fix these...get in there now and fire up the oven!

Chicken Enchiladas II

This is an excellent recipe and became an instant hit with the family. Reading through some of the other reviews I did increase the sauce between 1/4 and 1/2. The chicken should be increased to 2 cups and the cheese should be increased as well. After doing these increases I was still only able to fill 5 ten inch shells instead of the 6 twelve inch shells it calls for. Guess you could use smaller shells and just have more of them. Really, really good though. You won't be disappointed

French Onion Soup Gratinee

Fixed this recipe for Christmas Eve and it was a HUGE hit. Without qualification one of the best if not the best French Onion Soups I've ever had and this was echoed by family members that are very picky eaters. Followed the directions with one excption and that was the Gruyere cheese. Being a transplant patient I have to stay away from non pasteurized cheese of which Gruyere is one of those. The lady at Harris Teeter who works the cheese speciality section found a to die for substitution, AFON CLEDDAU (spelled as it appears on the label). It is a EXTRA MATURED WELSH CHEDDAR. Everything else remaind the same. If you have to use pasteurized cheese this is the one, trust me. If you're looking for that WOW factor, this is THE French Onion Soup to fix.

Best Tuna Casserole

Outstanding recipe. Lives up to its name. I must confess I did follow the suggestion of several others and added 3/4 cup sour cream and used crushed french fried onions instead of potato chips. Everything else including quantities remained the same. Even my sister-in-law said it was the best tuna casserole she had ever eaten....high praise indeed.

Peanut Butter Cup Cookies

WOW, these are absolutely incredible. Followed the recipe as is with one minor change. I followed the suggestion of someone else and used Dark Chocolate Peanut Butter Cups. It went from decadent to outrageous. I would offer two suggestions. One, before you start the mixing and baking process, unwrap the miniture cups (which ever flavor use choose) and place them on a plate and stick the in the refridgerator to cool. This way they are easy to handle when inserting them in the baked dough and being cool they don't melt and run all over the hot dough. Secondly don't fix more than two miniture muffin tins at a time as any more will result in the cooked dough not being as pliable as you will have too many to insert miniture cups into before the dough starts to firm up. But on the other hand these won't last more than 20 minutes anyway after they're fixed......

Jamie's Cranberry Spinach Salad

Now this is a great salad. Outstanding taste and simple to fix. Follow directions as they are and you'll be the hit of whatever you fix this for. Only consideration as an extra would be to add glazed pecans in addition to the original recipe. Hands down one of the best spinach salads ever....trust me

Too Much Chocolate Cake

This is just awesome. You might be tempted to add icing to this cake, but DON'T. It is just terrific. Jello now makes a Devil's food flavored instant chocolate pudding mix and I used that instead of regular chocolate pudding mix. Trust me, this will go in a hurry....

GA Peach Pound Cake

Simply outstanding recipe. A huge hit. Very important to use fresh ripe peeled peaches. Don't drain any juice and use 2 1/4 cups of peaches. Chop the peaches well. This will ensure that your cake will in fact be very moist and have a great peach taste. I would classify this as strictly a summertime desert if you are using real fresh peaches.

Rotisserie Chicken

Truly outstanding recipe. Looks to simple to be good but that's what's deceiving. If you are cooking a larger chicken you do need to increase the butter by 1-2 TBLS. You can also add 1/8 to 1/4 tsp of garlic powder. This will become a family/guest favorite in an instant.
