Homemade Mac and Cheese

I love this recipe.... and it gets 5 stars because I know to add about 2" chunk of Velveeta Cheese cut into small pieces and added to the cheese sauce. This makes the cheese sauce nice and creamy!!! Thank you for a great recipe. It was loved this Thanksgiving.

Simple Baked Beans

I LOVED THESE BEANS, and after reading some of the reviews there were some hints that I really liked. I wanted to serve about 10- 15 ppl. I used two large cans of the Bush's original and one of the bold and spicy. I cooked about 4- 5 pieces of bacon that I cut into small pieces before cooking. I then sauté'd the onions in the bacon grease until translucent to lightly browned. Mix together the beans, mustard, Ketchup, molasses, SKIP the brown sugar unless you like the beans even more on the sweet sweet side. MIX IN the bacon and onions. I used at least a half of large onion, 2tbs mustard and 1/4 cup ketchup. I then placed in oven cover and bake for three hours. LOVELY smell in the house, and the taste... MMMMM fabulous!!! Tastes like you cooked them completely from scratch!!

Pumpkin Crisp

Well this was the first time I can honestly say I wasn't impressed with a recipe. I wasn't happy with the "crisp" part of this recipe. It was not crispy. All the recipes for Pumpkin Cake or Upside Down Pumpkin Cake have a very nice crisp/crunchy topping. I like the idea of a crust like layer on the bottom of this recipe. And the pie filling was very good. After this point I would now follow the recipe for those other cakes and use another box of yellow cake mix and sprinkle the dry ingredients all over the pie filling, and then about 2 cups chopped pecans, followed by 1/2 cup melted butter poured evenly over the top. May want to use a little more butter. Then cook as per the recipe. The cake mix on top cooked this way with the pecans, etc give the cake a very nice crunchy top!

Chantal's New York Cheesecake

I LOVED THIS CHEESECAKE! This was my second time making cheesecake ever, first being a Red Velvet Cheesecake several years ago(it too was awesome). I am not so concerned with the top cracking a little as I always top mine. I put two bread pans of broiling water on the second rack, one on each side of the oven, instead of doing the whole foil water mess. Maybe some day I will try it. I did add some pecans to my crust as I like that a lot! I would not change another things... except maybe a wonderful Fresh Strawberry Topping that I made to put over it. I made a water/sugar/cornstarch mixture and cooked until boiling, then added about a cup of chopped/mashed strawberries and cooked it a while longer. I then poured this over 2 cups of sliced strawberries - mixed it together. I put this in a bowl next to the cake so those that wanted topping could have it! The strawberries remain very fresh tasting and have perfect sweetness!

German Chocolate Cake III

First time I made a homemade German Chocolate cake, so I thought with this many reviews that I would follow it exactly. This was for my husbands birthday. IT WAS EXCELLENT!!!! Please people if you make this cake follow it exactly if you plan to review. Now that I have made it once I do plan to add just a little more chocolate to the batter, NOTHING else. German Chocolate Cake is much lighter than other chocolate cakes and I personally want it a little more chocolatey. It was very light. Thank you for a beautiful recipe. Oh and there are lots of hints on the web that tell you how to substitute all purpose flour for cake flour. DON'T do IT! There is a lot of work that goes into this cake to have it turn out more course!!!! LOVE THIS RECIPE!! Oh and my husband LOVED IT!!!

Baked Denver Omelet with Shredded Potatoes

I was looking for a breakfast casserole that was easy, and rated high. And I also wanted certain things like potatoes and other veggies. I couldn't find it. I don't like taking someones recipe, making it the way I like it, then rating it a 5 star when what I did to it has very little to do with the original recipe. So I came up with this after looking at several recipes. This was VERY good. I served it for a brunch meeting and it was very well received.

Overnight Blueberry French Toast

WOW... There are only two of us, so making a half batch was perfect!. I did spread the cream cheese on the bread. I did put in about 1/8c powdered sugar in the the cream cheese. I allowed the cream cheese to sit til at room temp. Makes it much easier to spread. I did double the sauce!!! (if cutting recipe in half, then use original amonts of remaining ingredients) ALSO I used blueberries, blackberries and raspberries!! YUMMMMYY! Highly recommend and I look forward to trying other fruit such as peaches or cranberries!!

Rhubarb Bread Pudding

EXCELLENT - I used regular sugar though, an equivalent amount to the Splenda. The second time I made it, I put the rhubarb right in with the bread, then mixed the remaining ingredients in a bowl, skipping the part there you heat the milk and butter. It was even better than the first!! I am all about simple!

Baby Spinach Swiss Cheese Omelet

I am sure this might be perfect as is but I love my veggies in my omelets and I cook for 2. Here's what I did... 3 eggs beaten with 2 tbs milk, 1/3 cup onion and 1/3 cup grn or red pepper both chopped, 1 minced garlic clove, 1/2c chopped tomatoes, 1/2 c grated Swiss cheese. Heated the fry pan with oil, saute all veggies til tender with salt, pepper and nutmeg. Split in half veggies, set aside veggies. Spread veggies around fry pan. Pour eggs over veggies and cook till nearly done. Put reserved veggies over half eggs, then sprinkle Swiss cheese over veggies. Fold over other half of omelet. Cover and lower heat and cook til cheese melted and eggs completely done. YUMMY

Delicious Gluten-Free Dairy-Free Soy-Free Pancakes

Ok, I am NOT in favor of messing with recipes then rating them, AND I am breaking that when it comes to gluten, dairy, free, etc etc as everyone has their own tastes. I loved this recipe. It's the third pancake recipe I have tried. I used the reviewer hint of Brown Rice in stead of White Rice flour, and a few other ideas as I have played with the favors of these flours. I used 1/2c Brown rice Flour, 1/4 c Buckwheat Flour, 1/8c Sourghum Flour, and 1/8c Almond Flour. In place of the buttermilk powder and water I used 2c hemp milk original flavor mixed with 2 TBS white vinegar. I used soy free Earth Balance Buttery Spread in place of the oil, and I used 1 1/2 tbs pure maple syrup in place of the sugar substitute. Mixed all dry ingrediets, melted butter just to make it liquidy, poued all wet ingredients into dry and mixed fairly well. I did add a few blueberrys to the pancakes after they began to cook a bit... if you add blueberries, make sure you cook longer on side two or you will get doughy cakes!! Thank you for a great recipe!! My husband loved them!!!!

Chicken Stir-Fry

Excellent!!! Even though I was forced to use Teryaki Sauce....as I did not have Soy Sauce! I went to get the Soy and it was not there..... my mind quickly processed the obvious issues then on to possibilities.... There Teryaki was VERY good and I plan to rewrite the recipe for a chicken teryaki!

Bread Pudding II

EXCELLENT and supper simple! I didn't have raisins, so I used cranberries. Perfect! I can easily see using various fruits, dried, fresh or even preserves. Next time I might cut down the sugar to 2/3 cup if I want to make a syrup or hard sauce! My husband LOVED it!!!! I will make this again!

Old Fashioned Mac and Cheese

FABULOUS!!!! I didn't have Swiss cheese so I look forward to making it again! I even made this in a crock pot! I doubled everything, cooked the noodles only half way, then layered everything in a crockpot. I put the setting on low for 4 hours without stirring. It was the first dish GONE at the potluck!! I have to say I do use a little more cheese than the recipe says... but not much!!!

Pumpkin Pancakes

AWESOME!!! I start by making the recipe just as it calls to be made so that when I rate a recipe those who read the review know what the recipe might be like from my perspective if you make it LIKE THE RECIPE SAYS!!! I know this might be a novel idea but please give it a try!!!! I did have to add additional liquid as it was a bit too thick. When I see a recipe calling for milk and vinegar, these two mixed together give you an emergency substitute for buttermilk. Next time I will go ahead a use buttermilk!!! To the person who used the pancake mix - do not rate recipes like this if you are not going to follow the recipe as you did not make this recipe at all!

Six Can Chicken Tortilla Soup

Terrific base recipe... don't hold back if you are familiar with great base recipes...This one is a perfect diving board for very tasty soups. I added a few other kinds of beans like a can of cannelli, and red kidney...and a small amount of chili powder. I also added about a tbs of sugar, this really brings out the flavor of the food!!!

Easy Meatloaf

WOW its all in the ketchup/mustard glaze....and don't change a thing.... I have told people to make their own meatloaf recipe but to try this glaze... their husbands told them it was the best meatloaf they ever made. To the meat I added a little oregano, basil and garlic, and chopped green peppers....that is how I make my meat loaf... however this glaze will go on ALL meatloaves! Great recipe!
