Guacamole

Mmm this guacamole is awesome. I chopped the avocados because I like it chunky. I put onion, garlic, cilantro and jalepenos in the food processor (my husband doesn't like a strong taste of these things). When mixed with the lime juice, it coated the guac well and gave a great flavor throughout. Added cumin as others suggested. Yummy!

Broiled Tilapia Parmesan

This recipe is amazing! I use thawed frozen tilapia loins. Used light mayo and a small amount of butter. I had asparagus in the oven, so I sauteed the fish in EVOO for a few minutes on each side (like other reviewers I sprinkled both sides with Old Bay). Then I put it under the broiler with the mixture. Tasted like something that would come from an expensive seafood restaurant. A++

Broccoli Cheese Soup

This is a great soup! I listened to the reviews of others and used more than 160z. of broccoli...maybe about 24oz. The cornstarch really thickens the soup well. Before adding the cheese sauce, I used an immersion blender to puree the broccoli pieces (so that my broccoli-hating husband would try it). He loved the soup and so did everyone else. Thanks!

Roasted Vegetable Lasagna

My husband and I made this for Valentine's Day and we loved it so much! It is a light, healthier version of lasagna that is so flavorful! We didn't have eggplant but I roasted zucchini and bell pepper in a pan and then added the mushrooms later (rather than using two pans). We also put fresh chopped spinach in the ricotta. If you're a roasted veggie lover, you have to try this recipe!

Delicious Ham and Potato Soup

This soup is great! I cooked carrots, onion, celery and garlic in olive oil first (like I do with all soups). Like other reviews said, adding some shredded cheese to the white sauce is a nice touch. I used 1% milk and it was definitely thick enough. A healthier version of creamy soup is always welcomed and always good!

Maria's Stuffed Chicken Breasts

My husband loved this dish! After reading reviews, I used fresh chopped spinach. I sauteed it in olive oil with some garlic, onion and yellow bell pepper. The chicken can be fixed any way...rolling with toothpicks, cutting in half, or just one chicken breast on top of the other.

Homemade Black Bean Veggie Burgers

We really enjoyed these! The mixture made 4 good sized burgers. I thought all of the spices would make it too hot, but it didn't at all! I even added diced jalapeños to it. We put a half slice of provolone on half and cheddar on the other. I liked having mayo on it because the mixture can be a little dry. Pop in freezer while preheating the grill.

Tres Leches (Milk Cake)

This cake is amazing! I refrigerated it overnight and then mixed cool whip with a little vanilla to use as an icing. I may try the heavy cream next time, but I won't mix a lot of sugar with it. The cake is sweet enough...and very moist. Lovely recipe! :)

Beth's Scalloped Cabbage

I thought this was a great way to use up some leftover cabbage! I didn't cook the cabbage before putting it in the casserole dish and it was still cooked and creamy with the sauce. I sprinkled parmesan cheese on top with the crackers. Next time I will probably run water over the uncooked cabbage...to keep it moist and make sure the sauce runs over every piece.
