Considering there is no egg and no (added) fat in this recipe, I was amazed at how good these turned out! However, it needs more liquid (1 cup of milk instead of 2/3) otherwise the consistency is not right. Also, they were not sweet enough, so maybe some more sugar according to taste... I used about 1/4 of a cup extra cranberries, lemon peel (1 1/2 tsp.) and some juice instead of orange, a little bit of vanilla, brown sugar and 1 cup of whole wheat flour + 1/2 cup all-purpose. Definitely worth the try considering how much healthier they are than regular muffins. This recipe makes 12 normal size muffins, 146 kcal each, not 75 kcal like another reviewer mentioned.
