Mulligatawny Soup I

Reviewed: Oct. 8, 2007
As a beginner in the kitchen I made this recipe and my family LOVED it, including my 5 yr old. The 2nd time I made it, I used tofu instead of chicken and it was equally as delicous. 3rd time for a girls luncheon they all thought I was a fabulous "chef"!

This was just ok for me. It was a bit too oily for my liking.

Jamaican Spinach Soup

Reviewed: Oct. 17, 2007
I love this soup! I have made this several times now. For those that say it's bland; I always double the dry spices & the sugar. Extra ginger is good too. I make all different types of soup regularly & this is one of my favs. My kids like it too :)

Vegetarian Korma

Reviewed: Oct. 23, 2007
This recipe was amazing!!! I follwed it almost exact, just made a few minor changes, used coconut milk for a lower fat/non dairy version and added garam masala. My husband was so impressed, especially since cooking indian food was always his specialty...now it's mine ;)

This was great! I made it for a large crowd and people went back for seconds. No one ever goes back for veggie seconds!

this was not good for me. It was watery and the green peppers and mushrooms were just weird in it.

Tomato Curry Chicken

Reviewed: Nov. 21, 2007
This was the best chicken recipe I have ever made!! My hubby loved this - that doesn't often happen. I followed the recipe exactly, then added more curry powder, garam masala and cardamom as per the advice of another reviewer.

Tofu Lasagna

Reviewed: Nov. 21, 2007
This was really good. I used a whole can of tomato sauce and still think it could have used some more. Next time I will also add more veggies, zucchini and mushrooms. UPDATE: Made this again, sauteed mush and zuc's with onion and garlic. So good! My hubs and 5 yr old love this too.

Moroccan Chicken

Reviewed: Nov. 30, 2007
Ok, so I doubled the spices as per other reviewers and that was a big mistake. I would not double the turmeric next time. Way too strong. I added a small can of tomato sauce to "save" it and it turned out great. Served with couscous and family loved it.

Tofu Keema

Reviewed: Dec. 1, 2007
I added more spice and more canned tomato's, as well as the chicken broth recommended by most. This was still very bland. I find when I mince tofu it's hard to bring out any flavours. If I attempt this recipe again I will probably cut into cubes.

Peanut Butter Vegetable Chicken Soup

This was a little bland so I added 1 tab. of cumin and 1 t. of cayenne. It was so good after that! Although, I do prefer it without the chicken.

Mediterranean Turkey Pita Fold

Reviewed: Feb. 22, 2008
This was really good! I did change a few things. I used tofu (instead of turkey) fried it with oregano and garlic. I mixed the tofu with black olives and stewed tomatos. Mixed the rest of tomatos in some left over rice. Assembled in a tortilla wrap as listed. Added some avacodo. Amazing!! Will make this again. Might try the turkey and pita next time.

Vegetarian Burrito Casserole

Of all the complex, gourmet or exotic recipes I have tried from this site, this is the one that my husband likes. It's easy, quick and so good. I kept it pretty much the same. I too put the patty;s in the food processor. Next time I will just crumble them, they were a bit too mushy.

These were amazing! I left out the final process of butter/garlic. I used 1/2 tsp of garlic salt instead of the reg. salt. So good and extremely easy! Will make again for sure!
