Addictive Sweet Potato Burritos

I was skeptical about this recipe due to the sweet potatoes but my BF was adamant about it. Glad he was, these were delicious! Next time I will use 1/2 black beans, 1/2 kidney beans. I added some salsa to the bean mixture & will add cilantro next time. Can't wait to eat the leftovers!

Spicy and Creamy Vegetable Soup

I make soup often & I'm my own worst critic & I loved this. Don't hate on me for the changes ( I had to work with what I had on hand). I used noodles in place of potatoes. No green beans or celery. Fresh tomatoes in place of canned. I followed the seasoning to the T. Will make again for sure.

Lasagna Roll Ups

Delicious! Even 2 thumbs up from my 'lasagna hating' daughter. I left out the tofu (we had tofu the previous night) used zucchini, onion & garlic which I pan fried and then added to cheese mixture. I had to double the cheese mixture to get 12 roll ups. Not sure what I did wrong there. Also added oregano, parsley & fresh basil to mix. Such an easy, delicious recipe. Thanks!

African Sweet Potato and Peanut Soup

This was delicious. I had several sweet potatoes leftover from Thanksgiving dinner so I doubled the recipe (which I would recommend since it's so inexpensive and easy to freeze). I used my favourite veggie broth in place of water & used 1.5 x the amount of spices (based on doubling the recipe). My kids loved it! Oh, & I used crunchy PB in place of the peanuts & approx 1 extra tablespoon. I did not double the cayenne because if the children however, I just added more to mine upon serving. So good!

Moroccan Chickpea Stew

Amazing! Made a few changes; used half sweet potato & half white. Will use even more sweet potato next time. I doubled the curry powder & due to the fact I used sweet potato I omitted the apricots & used half the amount of raisins. Omitted the tomato sauce & used my favourite veggie broth. Used fresh tomatos in place of canned. My only regret is that I did not double the recipe. My kids ate 2 bowls full & there were no leftovers.

Blue Cheese, Spinach Meat Loaf Muffins

My kids love this dish. Although, I have to use feta in place of blue cheese. The blue cheese doesn't go over well with these kids. I always use organic ground turkey or chicken - it tastes less 'gamey' (is that a word?) than 'regular' ground turkey/chicken.

Heck yes! This recipe is amazing. I get asked to make it often. It's a little time consuming but worth the effort (if you have the time). Only change is; I use fresh spinach.

Make-Ahead Vegetarian Moroccan Stew

Love this recipe! I have made it many times (with a few changes). I have 2 girls (6 & 11) & they always devour it. The changes; Sautee 3 cloves of garlic with the onions. I Omit the honey & dried apricots. We are not 'sweet' eaters so the cinnamon is enough for us. I increase the spice mixture to 1.5 (aside from the salt, I keep as is). Use spinach in place of kale (I always have it on hand). I use 'chili' style canned tomatoes & canned lentils. If I don't feel like standing in the kitchen I just throw it all in a pot & let it simmer for a few hours - it still turns out amazing!

Chef John's Stuffed Peppers

Love this recipe! Actually all of Chef John's recipes that I've tried I love. The only thing I do differently is omit the sausage & add 1 tsp of fennel & 1/2 tsp of sage (recommended by another review) & use organic ground turkey. Oh, & I use organic chicken broth instead of beef. :)

Cabbage Rolls II

My family said 'these are your best yet!'. I made some changes due to the fact I usually cook with a lot if spices/seasonings. For the sauce I used 28oz of diced tomatoes & 1 can of tomato soup. Added extra brown sugar & worsestershire. Added 6 bay leaves . The meat: I added some of the tomato sauce, extra onion, 4 garlic cloves & 1/4 teaspoon of allspice (I will use 1/2 tsp next time). So good!!

Hearty Vegetable Lasagna

This was soo good! I added mushrooms, zucc's, red pepper, carrot, broccoli to sauce. Also, added spinach to the ricotta mix. I added oregano with the basil. I had cheddar instead of mozz. So delicious! My 4 & 9 yr old loved, as well as hubby! Def. make again!

Spanish Chicken

This was so good. My whole family loved it. We loved it so much that we made it 2 nights in a row for our dinner guests. The second round I doubled the recipe, cut up the chicken into bite size pieces, which we preferred and added more veggies (corn, zuchinni). Thanks for the awesome/easy recipe!

Grilled Chicken Burgers

These were so good and so easy. I dont BBQ so I pan fried them in Pam spray. I didnt have bread crumbs or Old bay seasoning so I used some dried stuffing mix and dried savory. Kids loved them! Oh, also left out the tomato.

Stir-Fried Vegetables

I have made at least 50 different recipes from this site, and I did not have high expectations due to the simplicity of this recipe. I was so wrong! This was delicious! My kids even loved it AND ate the green pepper! My only changes were: Used zuchinni, mushrooms,carrots,green/red pepper because that is what I wanted to use up. I had no green onion and used red in place of. I also added 1 brick of tofu and nearly doubled the sauce ingredients and ginger. Added a small amnt of chili pepper flakes, not enought to make it spicy. So Good!!
