Pineapple Cranberry Punch

This is a wonderful and simple punch recipe!!! It was a HUGE hit at a recent holiday party I had. I did use a 2 liter bottle of gingerale, and it was lovely. I had many compliments on this punch and will DEFINITELY make it again. You can't go wrong with the pineapple juice-gingerale combination. I will probably try a different juice for different seasons in place of the cranberry juice.

Lemon Wow Cake

This is a fabulously unusual cake! I have made it with both the yellow cake mix as well as a lemon cake mix, and they are both delicious, depending on how much you like lemon. I generally use 1 1/2 t. of tarragon, because the lemon-tarragon combination is fantastic in this. This is one of my "stand-bys" for a short-notice dessert! WONDERFUL!

Baked White Bean and Rosemary Spread

LOVED this, and it was a huge hit at a cocktail party I attended over the weekend. I didn't bother baking it....just let it suffice as a spread, and it turned out great. I also added a bit more rosemary to it. Will definitely make it again! I served it with a second dip (Braunschweiger party spread), and the combination complimented each other very nicely.

Irish Cream Bundt Cake

This is absolutely AMAZING! I made this for a St. Patrick's Day dinner, and it was a smash hit. Plus, it's so easy to make. I only used about half the glaze, though (but, I saved the rest to dip shortbread cookies in. I couldn't bear to waste it! *smirk*)

African Curry

This was FANTASTIC!! I doubled the curry, used a 20oz. package of bonesless, skinless chicken breast, and added about a cup of raisins right before I started adding the coconut milk. The leftovers the next day were even better as the flavor had time to develop. So easy, yet SO yummy!!!

Crab Stuffed Mushrooms II

These are FANTASTIC!!!! Even my boyfriend, who is terribly finicky, loved these. Also, you can put them together and refrigerate them until you are ready to bake them. WONDERFUL!
