About this Cook
I'm a working mom, and we are very busy. I like to cook sometimes, but other times it is one of those chores I dread. We raise our own chickens, so I'm always looking for recipes that use a lot of eggs!!
My favorite things to cook
I love to cook traditional fare. My husband is a meat and potatoes kind of guy, but that can sometimes get boring. AR helps me find new ways to cook and helps me find long-lost recipes I've misplaced. I love to cook things from my garden, and I love to use my smoker. Mmmm...

Mom's Zucchini Bread
What a perfect recipe! I left the skins on, used 3 Cups zucchini, used the crumb topping and baked in mini loaves. My silicone loaf pan is a set of six loaves. The quantity is perfect. I made one batch with dark chocolate chips and my coworkers are begging for more. I'll never use another zucchini bread recipe! My non-zucchini eating husband swoons over the bread and stood over the food processor until he'd shredded enough squash for 40 batches!!

Waffles I
I loved this crispy, light waffle! Like others, I made substitutions. I used two ripe bananas and reduced the oil to 1/3 cup. For a crispy waffle, the oil cannot be omitted. I increased vanilla to 2 teaspoon (to give it the carnival flavor) and I added 1/2 teaspoon cinnamon. My husband said, "Nailed it!" It's far superior to a box mix, and every bit as easy.
