About this Cook
I'm a working mom, and we are very busy. I like to cook sometimes, but other times it is one of those chores I dread. We raise our own chickens, so I'm always looking for recipes that use a lot of eggs!!
My favorite things to cook
I love to cook traditional fare. My husband is a meat and potatoes kind of guy, but that can sometimes get boring. AR helps me find new ways to cook and helps me find long-lost recipes I've misplaced. I love to cook things from my garden, and I love to use my smoker. Mmmm...

Waffles I
I loved this crispy, light waffle! Like others, I made substitutions. I used two ripe bananas and reduced the oil to 1/3 cup. For a crispy waffle, the oil cannot be omitted. I increased vanilla to 2 teaspoon (to give it the carnival flavor) and I added 1/2 teaspoon cinnamon. My husband said, "Nailed it!" It's far superior to a box mix, and every bit as easy.

French Pastry Pie Crust
I goofed and dumped all the water in at once. BIG mistake that I had to spend all my time attempting to correct. I pulsed the flour and shortening and salt in my processor a few times. Be careful not to do it too much or you'll liquify the mix. The water needs to be added by hand versus the food processor. I put the dough in cling wrap in the frig before rolling. I rolled it out between two sheets of cling wrap for ease of handling. The good news is it made a nice pot pie crust and my husband thought I was a genius. I will try again and add water a tablespoon at a time and re-review.
