Easy Microwave Chocolate Cake

This was definitely good for the amount of time and effort it takes. I LOVE the fact that it is made in the microwave. I just wish it was richer. I like a very rich, dark chocolate flavor. I did use the 3/4 c sugar and 3 tbl cocoa. I also added in some mini semi-sweet chocolate chips and sprinkled more on top before cooking. It was very moist -- better than cooking homemade cakes in the oven, how they seem to get dry, especially on the bottom. Have the milk handy when eating! I will definitly make this again when I find the house void of all other chocolate. UPDATE: I originally gave this 4 stars, but it was a 5 star breakfast with coffee the next morning! I left it covered on the counter overnight and the next day it was even better! Not hard as some of the other reveiws said.

Oaxacan Tacos

I was just in Mexican heaven! So simple yet so delicious! I was immediately transported back to the tiny taco stand we bought these for $1 from 12 years ago! Thank you so much. Lime and cilantro are two of the best flavors this earth has to offer. If I did anything different to the recipe next time, it would be to cut the meat smaller.

Coconut Ice Cream

This is seriously the best thing I have ever tasted. I have no control over myself when it comes to eating this ice cream! I refer to myself as a coconut fanatic and this comes in #1. I toasted the coconut, because it seemed like a good suggestion and haven't tried it any other way, because I like the texture it gives. Try it! You'll like it!

Perfumed Coconut Cake

I am a coconut fanatic and try a new coconut recipe every week. This is by far the best coconut cake I have ever made or tasted. It got rave reviews and recipe request with our small group Bible study last night. The frosting recipe definately make too much. So I used my leftovers on a second cake a week later. I bulked it up with a little more coco milk and powdered sugar. Stored it in the fridge while cake cooled. I whipped it up with the beaters again when I went to frost my cake. Everything seemed fine, but as I was frosting, it started melting and sort of turned into a big mess. Not sure what happened there, but still delicious and no complaints! I will make this recipe over and over! Oh, I couldn't find "instant" coconut cream pudding in our store, so I used the "cook and serve" variety in the recipe the same way.

Mary's Healthier Potatoes

I came across this recipe during an ingredient search for cottage cheese. I was skeptical, but also had potatoes to use up, so gave it a try. YUM! I thought these potatoes were delicious. I only had about 7 small potatoes, so I cut the rest of the recipe in half and it worked out perfect. There was plenty to feed my family of four.
