These were awesome, the right kind of chewy, even after a few days! I needed a bunch so I doubled the recipe and greased a jelly roll pan. I used a full 18 oz jar of seeded raspberry preserves. I warmed the uncovered glass jar in the microwave as another reviewer suggested for easier spreading. For the dough, I did knead this with my hands in a big bowl and I did kept kneading it until there were absolutely no powdery crumbs. Then I divided it in half and firmly pressed the dough onto the greased jellyroll pan. After adding the preserves, I sprinkled the rest of the dough on top being careful to cover all the preserves and pressed that in. Don't be afraid to press, it may be a little messy, but the cookie bars come out perfect this way. Everyone loved these. I can't wait to try blueberry and/or some sugar free preserve varieties. It does not matter if you have seeds or not, you can't taste them anyway.
