Roasted Butternut Squash Soup with Apples and Bacon

I make butternut squash soup all the time - most of the time without a recipe - but I decided i had to try this and I am thrilled with the results. I did not have bacon - so I just skipped this step and instead sauteed everything in butter and olive oil. (i also didn't have celery) I also went heavy on the curry. We are skipping the sour cream when serving because it's so good - and so healthy - why ruin a good thing. I think if I had used the bacon the sour cream might be needed. We'll see because I'm making this again for sure! *Note - someone reviewed this and said it was too vinegary ....? Made no sense to me and then I realized they must have used apple cider vinegar instead of apple cider. Made correctly - it isn't vinegary at all. The apple really makes this extra special.

Banana Pudding IV

I will make this again but next time I want to do the following: 1. No cookies on bottom - they were just soggy and pointless. Kids didn't want to eat them. 2. Line bottom with bananas only. 3. Put cookie crumbs & full cookies on top of pudding......right before I serve so that there is still a crunch.

Chicken Jambalaya I

This was good - but it wasn't jambalaya according to my husband. I usually make the slow cooker version on this site and I guess I will go back to making that for next year's Fat Tuesday. I did add shrimp - and I thought it was good. But it wasn't jambalaya.

Banana Crumb Muffins

good recipe! i took another reviewers advice and did 1/3 cup of oil instead of the butter. not sure what the difference is - next time i will make with butter to see which is better. i also added a teaspoon of cinnamon.

Creme de Menthe Grasshopper Pie

This was good - as good as my moms? Not sure. But it was good and I will make again since I don't have my mom's recipe. We only used 3Tablespoons of creme de menthe...and I think we could have used the whole 1/4 cup - but I was worried it would be too strong.

Molasses Sugar Cookies

I made two batches of these and they were phenomenal. This is my new Christmas cookie. I used butter instead of shortening - but other than that I stayed true to the recipe. Unfortunately - the first batch of cookies was pretty - big & chewy and then the 2nd batch was flat - but equally delish!!! So I have no idea what I did - but both batches were awesome. I did one sheet of cookies not rolled in sugar and my hubby and I agreed they were better with sugar. Everyone keeps asking me to make more! Great recipe!!!!

Wild Rice with Cranberries and Caramelized Onions

I love this recipe. I did all wild rice - instead of halving it - and I chopped my one onion - not 3 as stated. I also skipped the orange zest. I might cut back on the butter in the rice next time - the package said to cook it with a T of butter....but I thought it was a little too buttery. But otherwise delish...and I think I will cut my onions bigger next time as stated in this recipe because they do get pretty small. Thanks for a great recipe! I now officially love wild rice!

Spicy Slow Cooker Black Bean Soup

Super spicy & good. I soaked my beans over night and then rinsed and brought them to a boil. then transferred them to a crockpot with the chicken broth and spices etc... I used jarred sliced jalapenos and not four teaspoons - and I didn't measure the hot sauce...just several shakes! Wowser! I did use my smart stick to puree most of it. I also threw in a can of tomatoes with diced chilis at the last second. I served with chopped onion & shredded cheese as toppers. Excellent. Will definitely make again and again!

Best Black Beans

This was delish. I made a mistake and added the cayenne early on - and I also drained and rinsed the beans. when I did that I realized that it was pretty dry - so I added some chicken broth. It was spicy & delish. Everyone had at least two helpings!!!

The Best Fresh Tomato Salsa

Love this salsa! My friend made it with produce from her garden - orange tomatoes instead of red. It was delish! So now I have made it and it's just as good - although I do think the orange tomatoes gave it a little something extra...maybe just in visual? I followed the recipe to a T - but took half the onions, a bit of the green pepper, all the cilantro, and all the jalapeno -and mushed them with my hand held mixer. Then added it to the chunky salsa part. It is so so good!!! ***** 2nd time I made this I did the chopping and dicing and doubled the recipe. I did do the jalapenos with the smart stick and some of the tomato/onion/green pepper mix. I will NOT do this again. If I do this again - note to self...de-seed the jalapenos. I thought I was going to die - the jalapeno went up my throat and nose and burned! So de-seed this. Next time.

Flavorful Flounder

I followed this to the T and it was such a disappointment. First - it was more like soup? Because of this - the fish not just flaked - but totally came apart in little pieces. It was not nice to look at because of this. I will not make again. (that note is for my reference...so many people love this recipe...just not me.)

Ratatouille Pasta

This was good! I followed the recipe but at the last second decided to use a tomato basil spaghetti sauce instead of the canned tomatoes & paste. I added the extra spices too. I also had to use spaghetti instead of spiral pasta. I really liked it, so did my husband. Kids ate it with some threatening - but that is par for course. Will definitely make again. OH - and I love what salting the veggies did - but note that next time I will cut my eggplant a little larger.

Eggplant -- Easy, Good and Tasty

I'm giving it 5 stars because I made some changes and would give it 4 - but I made changes so that isn't fair. Anyway - I didn't have any tomatoes in the house - so instead I used an oregano, basil canned diced tomatoes mix. I skipped the dressing. I skinned the eggplant first, then sliced into 1/4" pieces. I did the egg/water and then italian seasoned bread crumbs. I baked for about 8 minutes per side. (i did flip them) - then after 8 minutes on side 2 I topped with canned tomatoes and shredded parm. It was good - but a little boring so I added some crushed red pepper flakes to ours. Couple of things I want to do for next time....maybe try mozzerella. Maybe try some extra spices. Slice the pieces a little thinner - and if making as an app - try to find a thin long eggplant. Although - I liked the larger rounds because folding it around the tomatoes was really yummy. Maybe I just needed more tomatoes - which leads me to the fact that next time...I want to do the tomato slice as others mentioned. That sounds good!

Salsa Chicken

This was so easy and good. I just seasoned both sides of chicken breasts, threw some salsa on top and cooked until done - threw on some mexican cheese at last minute to melt. My hubby and kids ended up cutting up the chicken and putting in wraps. served with spanish rice and black beans. hit!!!

Baked Sweet Potato Sticks

These were too limp and I'm assuming that I put too much olive oil in my bag when mixing. I also cut them into thinner strips and pulled them early from the oven because the bottoms were browned. I'm thinking less oil next time and cut bigger so they are more crisp and not limp.

This was good. I made it with whole wheat linguini and cut down the olive oil to 1/4 cup and instead of fresh tomatoes - I used 2 cans of diced tomatoes - drained. It wasn't as good as my favorite restaurants - but it was good. I don't think I could make this weekly as it is pretty salty tasting...maybe once every 4 months or so. I do love my olives. :) Kids wouldn't touch it.
