Spicy Chicken Thai Soup

Lemon Grass Lemonade

I used so many substitutions, this might be considered a different recipe but it was very good. I had no honey, so I used pure maple syrup. I had no zest so I omitted it and put in extra lemongrass to compensate. Then I ran out of lemon juice halfway through and had to use lime juice instead. I still think it tastes mostly the way it was meant to - not like lemonade but some of the best home brewed tea with a very zesty lemony flavor. Hot or cold, it was perfect

Gisela's Butternut Squash Soup

I think I prefer the more savory side of butternut squash recipes. I ended up adding thyme, black pepper, ginger and curry to counterbalance the orange. And I only used half an orange!

Thyme-Rubbed Steaks with Sauteed Mushrooms

The mix of ingredients is great, but the recipe is backwards and wastes all of the great juices the steak will make. It's not in the Bible, but that's a great sin! Make the steak first and then cook the shallots and mushrooms in the pan. When you add in the wine, scrape all the amazing steak bits up and let them mix with the sauce. This tastes way better than just making the sauce with butter. It also saves a pan!

Garden-Fresh Spaghetti

This is the best sauce I have ever made. I make this when I am cleaning out my vegetable bin in the fridge. I've put in squash, sweet potatoes spinach, green beans.. (not all at once) I swear each time is better than the last.

Amazing 'Pizza' Pork Chops

These were amazing and so easy. I had to use canned diced tomatoes because at the last second I discovered the only tomatoes I had were rotten. It was still excellent!

Spinach Basil Pesto

I wish I read the reviews of this before I made it. I love garlic, but it overpowered the pesto. I added an extra cup of spinach and lots of cheese to fix the problem.

Cheesy Salmon Pasta

If your pesto is not oily, you need to add more olive oil than called for to make sure this isn't dry. Try making your own pesto sauce instead of using premade. This was SO good. I used the pesto that I made myself and frozen earlier (I used the Pesto Sauce recipe by Sue Jurak. I added tomatoes just to make it look more zippy. WOW good!

Butter Snow Flakes

I really liked these. I thought they had a great buttery flavor. They aren't too tasty fresh out of the oven though, they are much better when they cool off. Odd for a cookie My husband couldn't stand them.

After-Thanksgiving Turkey Soup

Only change I'd make is put less flour in. It was a bit pasty flavored and I had to add some backup broth. All around YUM though. I also dumped in the leftover Awesome Sausage Apple and Cranberry stuffing from this site. Believe it or not, apples and cranberries in this soup are pretty good!

Awesome Sausage, Apple and Cranberry Stuffing

I accidentally ruined this. I used 3 cups of stock instead of 3/4ths, because I forgot to separate the awesome stock I was saving for the gravy. Of course, the texture was terrible, but we STILL ate it because it tasted so good! I'm going to make it into stuffing soup tomorrow. One change I'd make -- use fresh cranberries instead of dried. I think the tart freshly popped cranberries would be SO amazing in this.

Best Tuna Casserole

This is my second time making it. The first time, I gave it 3 stars because it was bland and dry. The second time, I tweaked it. MUCH better. First I added a clove of garlic, an extra can of soup AND some sour cream. I also added some dill weed. Dill makes tuna and salmon taste SO much better. I have no idea why. I also used green beans instead of peas because I hate peas.

Caramel Apple Pork Chops

I wish I could give this 7 or 8 stars. It was SO good. I made this in the oven as suggested and also used the 2 parts apple juice, one part soy sauce marinade. It was so tender and the perfect blend of sweet and savory.

Chicken Paprikash

I originally gave this recipe 4 stars. But I used Hungarian (1 1/2 Tablespoons of sweet and half a tablespoon of sharp) I also used chicken stock instead of water. If you are a newbie to cooking, the dumplings take a LOT more time and effort than you might think. It added 2 hours to my prep time and was a bit stressful. I'd likely just use egg noodles or mashed potatoes next time.

Yogurt Chicken

Very good. I seasoned my own breadcrumbs, which is important, because it's where most of the flavor comes from. I think I will try keeping the chicken slightly frozen so it will come out more moist. It was pretty moist, but I think I could do better.

Slow Cooker Chicken and Dumplings

This is my FAVORITE recipe so far. This came out so amazingly well that even though it serves 8, there will likely be no leftovers. I made some changes to the recipe, as usual. I used my poultry spice that I made earlier, added cumin and garlic. I used chicken broth instead of water. Instead of biscuit dough, I used crescent roll dough—you wouldn’t think this would make a difference, but because the dough is already rolled flat, the dumplings are more noodle like than dough ball like. Then I put the chicken in 100% solid block frozen and cooked it for six hours on high. The chicken got so tender and juicy, that it just fell apart when I was stirring in the dumplings. I didn’t have to shred it. It’s SO GOOD.

Poultry Seasoning

I had to make this because I had no poultry seasoning and it was WAY too cold to go outside with a newborn. I had to substitute oregano and basil for the marjoram and rosemary for the same reasons. I can't wait to make this with the correct ingredients. My hands smelled GREAT after mixing it. I reduced the servings down to what I needed.

Chicken Tikka Masala

Very good. I used the cookie cooling rack as a grill as suggested by someone here and that worked out perfectly. I also substituted Garam Masala for cinnamon and that was great. If you want it less spicy, try using more cream. I accidentally put too much cream in the mix and it was far less spicy. When I put the right amount of cream, it was much spicier. That may be simpler than trying to change the spices.
