Seven Layer Dip I

This was so good. The only change I made was adding a packet of taco seasoning to the ground beef- it seemed too plain without it. Otherwise, this was totally awesome.

California Cherry and Walnut Salad

Divine! I recently attempted to sub the sugar for sugar substitute (truvia) and it was awful. Please don't do this! Also, I used bagged baby spinach and added bleu cheese- HEAVEN!!

Fluffy Pancakes

Fantastic recipe! Couldnt be easier! I'll admit, even as a pretty seasoned cook I was a little afraid of the soured milk part, but these came out so fluffy and amazing I wouldn't think twice about doing it again! I did add a tsp of vanilla as others suggested.

Tartar Sauce I

Excellent- I halved the recipe and doubled the amount of onion and relish. Also, I added a dash of garlic powder. I ran out of mayo so I ended up using 3/4 mayo and 1/4 miracle whip, which worked out just fine since its a little sweeter and the relish I used was a no sugar added variety. We ate this with fish and chips tonight, and I can't wait to use the leftovers for fish sandwiches Friday. Thank you so much for sharing!

Watermelon Fire and Ice Salsa

OMG this recipe is so much fun! I prepped it tonight for the grilled fish tacos (from this site) I'm making tomorrow and I sneaked a taste- WOW! Even before the flavors had time to mingle this was great!! The combo of the sweet and cool watermelon with the spicy heat of the jalapeno and the green onions is FABULOUS! I actually omitted the green pepper because I didn't have any on hand, thought I may stop and pick one up tomorrow. Also, because I am letting this chill overnight I added garlic powder instead of garlic salt so all of the moisture doesn't get sucked out of the melon. I can't wait for dinner tomorrow!!

Oriental Cold Noodle Salad

Awesome, and came together in less than 10 miuntes! I actually halved the recipe and used 2 packs of ramen nooodles that I had on hand. I subbed the peanuts for toasted sesame and used about 3 tbs of lime juice. Instead of red pepper flakes, I added about 2 tbs of sweet Thai chili sauce, only because my hubbys not too big of a spicy eater like me. A hint to those in a hurry and using ramen- place the block of noodles in a microwave safe bowl, cover with water, and microwave on high for 4 minutes- they come out perfect everytime.

Big Al's K.C. Bar-B-Q Sauce

OH MY GOSH this is outstanding and so simple! I did'nt have the molasses so I subbed dark corn syrup and it is amazing- I can't stop licking the spoon! Also left out the celery seed- I so can not wait to make more recipes with this, as I'm using it as a dip for chicken tenders tonight. YUM!

Taqueria Style Tacos - Carne Asada

Great! I put everything in the crock pot- marinade and all and let it go on high for about three hours. It was awesome and super tender. For the sauce, I made it as written subbing 2 tbs chili powder (bad bad, I know, but it was all I had!) and while the flavor was good, it was burn your tongue off spicy. I like things that way but I was not so sure my dinner guests would, so I toned it down by adding a can of fire roasted tomatoes to the mix and a half bunch of cilantro. It came out great! The only other change I made was adding a diced avocado to the relish. Served this all with refried beans and mexican rice from this site, and of cold mexican beer. Awesome meal, thanks for sharing!

Excellent recipe! I halved it and it came out great! I used butter flavored spray for the pan. One word of advice- mix everything according to the instructions. I didn't follow them and had a very lumpy batter initially.

Cheese Fondue

I'm writing this as my dear friend suffers from eating too much- this was great, to say the least. It started a teensy bit too thick, so I added about 1tbs of lemon juice and maybe 1/4 cup of light beer to thin it out. For 5 people there were no leftovers. My friends thought it was just as good as the melting pot (I've never been) for about 1/10 of the price! :)

Tasty Tuna Burgers

These were great! I've been referring to them as "The Poor Man's Crab Cake". :) I did make a few modifications- I used a 4.5oz can of albacore and a 4.5oz packet of garlic and herb flavored tuna, and subbed egg substitute for the egg, green pepper for the red, and miracle whip for the mayo. I also added a little garlic powder. I was able to make 4 perfect patties without refrigerating by forming the mix into a ball, scoring into 4 equal sections, rolling each section into a ball and pressing these into the frying pan. These will definitely be an addition to our dinner menu! Thanks!

Mom's Zucchini Bread

Fantastic!! I used 3 zuchinnis, peeled and that equaled a little more than called for but it still came out great. Also, I didnt have the nuts on hand so I chopped up a bar of chocolate and stirred that in the batter. Divine! I made one loaf of bread and 12 muffins. The muffins were done in about 30 minutes, and the loaf took about an hour. Thanks for sharing!!

Holiday Chicken Salad

Yum! I followed the recipe aside from substituting cashews for the nuts and using low fat mayo. I cut the recipe down to 4 servings and used one large chicken breast, boiled in a mixture of water, a chicken bullion cube, and a few shakes of garlic powder and montreal chicken seasoning, then cooled and chopped. I agree with the other person who said that the word "Holiday" should be removed from the name- this is great for any time of the year!
