Mom's Zucchini Bread

Fantastic!! I used 3 zuchinnis, peeled and that equaled a little more than called for but it still came out great. Also, I didnt have the nuts on hand so I chopped up a bar of chocolate and stirred that in the batter. Divine! I made one loaf of bread and 12 muffins. The muffins were done in about 30 minutes, and the loaf took about an hour. Thanks for sharing!!

Taco Seasoning I

Sesame-Soy Broccoli Florets

This was alright, but the vinegar/sugar/salty combo was a little off. I made it first as written, and the second time I made it I left out the sugar and vinegar and added sesame oil. With those modifications it came out great.

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

This was really really good! We both loved the combination of the textures of the fish and phyllo. Also, I subbed salmon fillets and it was wonderful.

Tasty Tuna Burgers

These were great! I've been referring to them as "The Poor Man's Crab Cake". :) I did make a few modifications- I used a 4.5oz can of albacore and a 4.5oz packet of garlic and herb flavored tuna, and subbed egg substitute for the egg, green pepper for the red, and miracle whip for the mayo. I also added a little garlic powder. I was able to make 4 perfect patties without refrigerating by forming the mix into a ball, scoring into 4 equal sections, rolling each section into a ball and pressing these into the frying pan. These will definitely be an addition to our dinner menu! Thanks!

Spicy Bok Choy in Garlic Sauce

Very good! I had to omit the ginger as I didn't have any. I used a red chili pepper paste to spice it up. Also, didn't have any oyster sauce so I subbed fish sauce and it was good.

Vanilla Crepes

Excellent recipe! I halved it and it came out great! I used butter flavored spray for the pan. One word of advice- mix everything according to the instructions. I didn't follow them and had a very lumpy batter initially.

Rich and Simple French Onion Soup

Super yummy! I halved the recipe and used plain yellow onions, which I sauteed in the butter/oil combo until caramelized, about 30 minutes. To speed up the caramelization, I sprinkled the onions with a little sugar and salt. I also used fresh thyme from the garden vs. dry, and added a teaspoon or so of beef bullion powder. One tip I had to make the soup a little less "greasy"- I dipped my bread slices in the pot of onions before adding the broth to soak up some of the butter/oil before toasting the bread in the oven at 350 for about 10 minutes. Mmmm!

Taqueria Style Tacos - Carne Asada

Great! I put everything in the crock pot- marinade and all and let it go on high for about three hours. It was awesome and super tender. For the sauce, I made it as written subbing 2 tbs chili powder (bad bad, I know, but it was all I had!) and while the flavor was good, it was burn your tongue off spicy. I like things that way but I was not so sure my dinner guests would, so I toned it down by adding a can of fire roasted tomatoes to the mix and a half bunch of cilantro. It came out great! The only other change I made was adding a diced avocado to the relish. Served this all with refried beans and mexican rice from this site, and of cold mexican beer. Awesome meal, thanks for sharing!

Cream of Mango Soup

Excellent! I cut the sugar down to about 3 tbs. and used jarred refrigerated mango that was on sale. Also followed the advice of another reviewer and added a few tbs of grated fresh ginger root- delish! :)

Quick and Easy Alfredo Sauce

Excellent! The flavor did not taste at all like cream cheese to me. I added extra garlic powder to the butter, and some basil paste. Also, I only used a 1 1/2 cups of milk as the sauce was pretty thin. I added 2 cups each of diced ham and green peas and served over fettuccine. Delish!!

Big Al's K.C. Bar-B-Q Sauce

OH MY GOSH this is outstanding and so simple! I did'nt have the molasses so I subbed dark corn syrup and it is amazing- I can't stop licking the spoon! Also left out the celery seed- I so can not wait to make more recipes with this, as I'm using it as a dip for chicken tenders tonight. YUM!

Honey Mustard Sauce

Pretty good! I had to double the mustard (dijon) and honey as it was initially too mayo tasting. Love the addition of lemon- it really freshens it up and gives it a nice consistency as a dressing.

Oriental Cold Noodle Salad

Awesome, and came together in less than 10 miuntes! I actually halved the recipe and used 2 packs of ramen nooodles that I had on hand. I subbed the peanuts for toasted sesame and used about 3 tbs of lime juice. Instead of red pepper flakes, I added about 2 tbs of sweet Thai chili sauce, only because my hubbys not too big of a spicy eater like me. A hint to those in a hurry and using ramen- place the block of noodles in a microwave safe bowl, cover with water, and microwave on high for 4 minutes- they come out perfect everytime.

Amy's Cilantro Cream Sauce

Good stuff- I halved the recipe and left out the celery salt. The salsa verde I used was not at all spicy, so I threw in 1/4 of a large jalapeno to give it some kick. Overall, it has a pretty strong cream cheese flavor which went very well with chips but not so well with my fish tacos. Next time I'm going to do 1/2 cream cheese and 1/2 sour cream with the tacos.

Watermelon Fire and Ice Salsa

OMG this recipe is so much fun! I prepped it tonight for the grilled fish tacos (from this site) I'm making tomorrow and I sneaked a taste- WOW! Even before the flavors had time to mingle this was great!! The combo of the sweet and cool watermelon with the spicy heat of the jalapeno and the green onions is FABULOUS! I actually omitted the green pepper because I didn't have any on hand, thought I may stop and pick one up tomorrow. Also, because I am letting this chill overnight I added garlic powder instead of garlic salt so all of the moisture doesn't get sucked out of the melon. I can't wait for dinner tomorrow!!
