I put 2 chicken breasts, 1/2 cup salsa, 8oz tomato sauce, a can of nonfat refried beans, and Taco Seasoning I (recommended from the site) in a crock pot for 4hrs on high, w/ med/low setting for the last hr. Shredded the chicken 2-3 hours in.
Initial verdict after 2 hrs: Too much taco seasoning as written (I stupidly left it at the 10 servings level). Next time I'd decrease to 4. The chili flavor was too strong. I'm noticing other reviewers included an extra chicken breast (3 for 4 servings) so that probably helped keep the seasoning from being too strong. The spices are overwhelming, especially the chili powder. I added 1 cup of cheese and bumped up the salsa to 1 cup but it still didn't mitigate the overpowering taste.
Verdict after 4.5 hours of cooking in the crock pot: WOW the flavors really do need time to blend together and the spices aren't as overpowering after they've cooked for awhile. What a difference from the initial taste! Next time, I'll use 1/2 the Taco Season I ('cause it was still a little salty & the chili flavor was still kind of strong) and add 1/2 - 1 cup more of cheese. I might also try adding an extra chicken breast. Also, use burrito-size tortillas or they're too small and the filling bursts out! I learned my lesson the hard way :)
This was enough filling for 10 8 inch & 1 burrito size tortillas. All in all, this was SUPEReasy to make in the crock pot. It was my first time using it and I'm a believer now! :)
