Hearty Ham Casserole

This was ok. My family ate it, it's definitely better than throwing out the left-over ham that won't get eaten otherwise. I added a cracker crust on top and just a little green pepper for color and taste. Will look for another alternative for left over ham though, as it didn't excite me.

Broccoli Casserole I

I halved this to feed 4 adults. It was tasty, really a lot of sauce. I think I will use florets instead of chopped broccoli next time, the chopped broccoli just did not seem substantial enough for the abundance of sauce (soup and cheese.) I also think this might have been good with a cracker crust or cheddar french fried onions or something to give it a little cruch and/or texture. But it was a good base and I will make it again and work with it. The family liked it, even the anit-veggie husband.

Rempel Family Meatloaf

Finally! I have wanted to LOVE meatloaf and this one has made a believer out of me! I followed the recipe as directed, except that I used Fiesta Ranch Dip mix instead of onion soup mix, and it was SO tasty and SO moist (maybe a little too moist to look pretty, as it crumbled a bit when removed from the pan.) We like rach dressings and dips, so this was a good substitution, thanks to the reviewer who mentioned it before! Now we can eat meatloaf at my house on a regular basis, my whole family liked it!

Honey Glazed Ham

Nothing earthshattering, but good. I think I will buy the ham pre-sliced nex time, because my issue has always been that no matter what I do or how long I work at it, the ham always tastes the same, like ham. This was pretty mich the same, expcet the outer layer where it had been scored was more tasty. I cut the recipe in half, as we had a little under a 3 pound ham for my family of 4.

Slow Cooker Chili II

I am not a huge fan of chili, but my husband has been asking for it, so we tried this one. I am not a huge exact measurment person, so I threw in the beef, approximate amounts of onion, celery and green pepper. I drained all but 1 can of beans (I used dark red, light red and white kidney beans.) I used 1 can of puree and 1 can of diced tomatoes with green chilis. I used the recommended seasonings, approximately, but used tobasco instead of the chili sauce that I didn't have. I cooked for 6 hours on high. This was really hearty with the right ammount of sauce. We stirred in sour cream and cheddar cheese and topped with cheddar french fried onions (way to load up the calories, but boy was it good!!!)

Green Bean Casserole I

I am giving this a 5 because after lots of changes, this was incredible! I used fench cut beans, 1/2 sour cream instead of all milk, 1/2 cup chopped oinion, and a cup of cheddar cheese. I did not mix any french fried onions in, as they tend to get soggy, I just topped with them (cheddar flavored) instead. My husband who eats NO veggies, and everyone else too, had 2 seving each, our family of four almost polished off this whole casserole. I am very excited, as I have been looking for a green bean casserole recipe, and this was so tasty. Definitely cut down the liquid, or it will be too runny!

Biscuit Pizza Bake

This was a hit! I have been trying to figure out a way to serve my family home-made pizza in a way that's easy and make enough. This went together in a few minutes (we ommitted the burger). We loaded it with toppings, all that the recipe listed, plus added olives. We also used double the cheese, because if it holds still long enough in this house, it gets cheese on it, we love cheese! I was worried about loading it with too many toppings, as sometimes that causes your crust not to cook correctly with regular pizza, but I don't think you could over load this! It has a stuffed or deep dish pizza feel and taste. The peppers and olives helped tone down the slightly sweet taste of the biscuit dough too. You could really tailor this to your own taste, with ham and pineapple, for example, and it would be excellent. We have found our new pizza recipe.

Baked Chicken Nuggets

We really enjoyed this recipe. It is not rocket science, but a good basic meal to throw together quickly, which is why I pulled it up. My kids ate, but didn't love it, there was too much seasoning and flavor (which I loved) for their taste, because they wanted to dip them in ketchup, ranch and honey, none of which tasted great with this. I loved the butter in this recipe (healtiness aside), and plenty, almost too much breading stuck. I would not use as much basil next time, and maybe plain breadcrumbs would be sufficient with the added herbs. Definitley a keeper, though.

Cheesy Chicken and Rice Casserole

Even with fairly major adjustments, most of which were already mentioned by other reviewers, this recipe was just not exciting or unique and was not even as good as some boxed (yes, gasp, boxed) dinners we have made. It definitely needed 2 cans of soup and double the cheese too (we love cheese). I also added onions and green chili. This helped, but again, not what I was looking for.
