Peanut Butter Vegetable Chicken Soup

This is fantastic - I change it around depending on what veggies I have. Tonight I used leftover rotisserie chicken, a broccoli, cauliflower, orange and yellow carrot mix with some green beans thrown in for good measure. The peanut butter adds a wonderful richness and I like the texture you get with crunchy peanut butter rather than creamy. I have yet to serve this to someone and have them not tell me they love it!

Best Peanut Sauce

This was terrific - super easy, very tasty. Used brown sugar instead and used cayenne and a little rice vinegar. Even my son loved this!

Irish Soda Bread

This was wonderful and so easy - I couldn't believe how huge the loaf was! I'm going to try it again with dates and apricots and leave out the caraway (I think its an acquired taste).

Chocolate Chocolate Chip Cookies II

I used mint chips instead of chocolate since these were for a Christmas party and they were wonderful - fudgy but still with crisp edges. Definitely will be making these again!

Good Old Fashioned Pancakes

These are good, quick and easy. Definitely better than store mix, imho. I got twelve pancakes using a 1/4 cup scoop, and since I like my pancakes thin, I think I'll add more milk next time and probably end up with sixteen. Great recipe.

Sausage Cabbage Skillet

Super simple and very hearty and satisfying. I didn't have any onion and don't care for green pepper, so omitted those but still delicious. The cabbage was so good I think I'd rather have more of that and less of the sausage. Apples would be delicious in this as well.

Delicious! Supereasy - make sure you cook at a full boil for the full five minutes. Creamy, yummy and as decadent as fudge should be.

Chocolate Brittle Surprise

This stuff is terrific - just like a Heath bar! Yummmmm! And you won't believe how quick and easy it is! Think I'll experiement with cappucino chips next time, or maybe white chocolate.

This was a real lifesaver for a last minute satisfying dinner! I added an extra potato and threw in a can of clams and it was great! Needs something to spice it up a little though.
