My favorite family cooking traditions
Every Christmas my family has enchiladas instead of a traditional dinner. This tradition started when my parents split up and we were too poor to afford a turkey will all the fixings.
My cooking tragedies
I once spent hours making a chicken pot pit from scratch, crust and all. I was transferring it from a cooling rack to the counter when the entire pan collapsed. Right after than I went and bought real pie pans instead of continuing to use the disposable kind.

Potato Bacon Chowder
This is SO good. I had a huge bag of bacon bits so I used those instead of frying up bacon. When I sauteed my celery & onion I used olive oil. But, those are the only changes I made, it is so yummy!

Zucchini Soup II
This was absolutely delicious! I didn't follow the recipe exactly. Instead of 1/2 a cup of margarine I sauteed the veggies in olive oil and added a little black pepper and garlic powder. I also used a low fat/low sodium soup and 2% milk. It was still rich and delicious!

Cilantro Chicken Salad
This was easy to make and delicious. A great summer salad since it's so light and flavorful.
