About this Cook
I consider both Minneapolis and Grand Forks as "Home Towns" - My time as a child was split between the two. Occupation : Catering & Convention Manager for Starwood Hotels & Resorts Worldwide, and Part Time Private Chef. Prior to this career, I worked as an Investment Banker and lived and traveled all over the US for nearly 20 years...Looking back, the traveling allowed me to taste many different foods and really defined who I am now as a person and a personal Chef. Huge college hockey fan - Go Fighting Sioux!!!
My favorite things to cook
Too many to list - My specialty in appetizers are various stuffed mushrooms and you'll always get some sort of spinach when I cook for you. Also, I love the outdoor grill all year around - Even in the cold winters of Minneapolis! I recently lost 40 pounds and am now focused on "Heart Healthy" foods and menus.
My favorite family cooking traditions
None - my mother cooked with no spices at all!!! I am 100% self taught.
My cooking triumphs
Holiday Party for 30 - I put out 12 differnt appetizers for this party ranging from stuffed mushrooms to crab cakes to corriander honey chicken w/ sweet and sour peanut butter dipping sauce. The event was five hours long and my sous chef (my wife Mary) and I were exhausted afterwords!!!

Spinach and Mushroom Pinwheels
My wife made this dish last weekend on Mothers Day. I was stunned when I realized that she was making pastry dough since so many pinwheel recipes use Pillsbury tube dough... Anyway - what a huge hit!!! We added some tomato for some color but followed the recipe as is. Delicious! A note of caution – we baked these on a cookie sheet covered with tin foil and almost didn’t get them off the foil! No foil next time – we’ll spray the pan.

Quick and Easy Alfredo Sauce
Great Alfredo Sauce...People have no idea how quick and easy this recipe is! I've used this sauce for manicotti, fettuccine, and artichoke spinach pizza -awesome!

Brunch Enchiladas
I made this recipe for a brunch and they turned out great! I served them along with a skewer and toast - everyone loved them. I actually made too many so I gave a couple to my neighbor the night before...They baked them off the next morning and showed up at my door for the recipe! Very good!
