the happy cook!
About this Cook
I work as a pastry chef at Edible Art, in Raleigh NC. I have been baking and decorating cakes for over 10 years now. I also enjoy cooking as much as baking. I aspire to open my own restaurant one day. check out our website at www.edibleartbakery.com
My favorite things to cook
Shrimp and Grits, my recipe. Mexican food!! I think it's the best food in the world. It's also my friends' favorite thing that I cook. German food, traditional, just the way my grandma taught me! I really like making coastal southern foods, such as grilled and fried fish with a variety of sauces and seasonal vegetables. I also love the heck out of salads with homemade dressing!
My favorite family cooking traditions
Pit cooked BBQ, eastern style! Brunswick stew. German foods, Rouladen, Kartoffel Klöße, sausages, sauerkraut and German potato salad. My grandfathers Greek food, he makes awesome crepes. Lamb chops with gravy and rice. Cabbage rolls and egg rolls. Too many to name!
My cooking triumphs
"Lemon Bar Cake" It's a favorite among my friends. My roasted salsa recipe is a winner as well as my baked, then pulled Mexican chicken. Quiche. Being able to make good pie crust is a skill.
My cooking tragedies
My pumpkin pie I made for Thanksgiving one year, the crust was awful. I also screwed up a pumpkin cake recipe when I was making a wedding cake by adding baking soda instead of baking powder. The cake was dense and greasy. I also had a wedding cake start melting in the back of the delivery van once, I'd say that's a tragedy!!

Bacon-Wrapped Chicken
I made this one ago and it was really good! The chilies balance out the cream cheese well, so the cheese taste is not overbearing. I also added cumin and roasted peppers to my mix, then blended it in the food processor. My advice is to let this chill for a while if you can. It's hard to keep the mixture in the chicken when it's room temperature and runny. I also breaded mine.

Strawberry Cake from Scratch
I made this cake for a birthday party. I would not recommend using it if you plan on decorating. It is a super moist cake and is hard to get out of the pan. Definitely line your pans with wax paper. The batter seemed too runny and was breaking. I think more dry ingredients are needed. I was always taught that a good cake recipe has an equal amount of wet and dry ingredients. Also add a pinch of salt, the recipe does not include it, and the first batch I made tasted flat.
