Light Wheat Rolls

These rolls are easy, and turn out well every time. The variations I have made: Use 2 cups white flour, 2 cups WW flour, and then make up the difference with ground flax seed. Also, instead of cutting and rolling them, I have flattened each portion and filled them with seasoned ground beef, curried chick peas, etc. If trying this, remember to place them pinched end up in the oven- if you put them in pinched side down, the tops will split.

Easy Quiche

We use the basis of this recipe for almost all quiche in our house. This is a great recipe for using up leftovers, I have used red peppers and leeks, salmon and green beans, three kinds of cheese. The possibilities are endless. I often substitute 3/4 cup of whole wheat flour and 1 tsp of baking powder for the biscuit mix.

Scalloped Potatoes and Onions

Lemon Cream Cupcakes

This recipe cooks up beautifully each time. I add a little more zest than called for, I use plain yogurt in place of the sour cream, and I juice the lemon and add the juice to to the yogurt prior to combining all the ingredients. This recipe bakes up great in 8-inch round pans for cakes as well. The cupcakes (or cake, for that matter) bake up nice and light, and the batter is very fine. A go-to recipe for my kids birthday cakes, for an alternative to the classic white/chocolate options.

Soft Oatmeal Cookies

Great Recipe, turns out perfect just the way it is. Accidentally omitted the cinnamon, loved it anyway. Gives a sweet and chewy cookie. Recipe recommends 8-10 minutes in the oven- 8 minutes was perfect for me.

Perfect Berry Shortcakes

We have made this recipe multiple times both as a large shortcake and as mini biscuits. Always delicate and delicious. Very good with balsamic strawberries and whipping cream.
